Yes We’re Here~ at the brink of Summer, with all its warmth and glory to come…let’s make lots of great memories of the 2018 Sunshine and Splendor! We have 3 full days of friends, family and plenty of good food in store for the celebrating. Let’s “Skirt” our way through! Skirt steak is a delicious and quick meal idea. Fire up your grill ~ it will never be this clean again all season~ take those skirt steaks out of the fridge, brush them with a really good extra virgin olive oil on both sides. Rub into both sides a really good coarse salt. A new found friend from Argentina recently introduced me to salt from Argentina~ who knew we would start salt tastings…it’s true and amazing~ there’s salt and then there’s…Salt!  Leave skirt steak out on counter to become room temperature (at least 1 hour) to meld and marinate while you prepare your choice of sides. Get that grill hot, done in a flash skirt steak with its course texture and hearty grain is a great cut for marinating in  just about anything as it has the ability to soak in and really pick up flavors. Cooking over a very high heat maximizes the nice charred outer crust, while still helping the center part of the steak to maintain a medium~ rare to medium melt in your mouth texture.  After grilling let them rest for a few minutes and then slice up for easy serving. I think it’s definitely time for that “toast” to Holiday Memories about to be made! Here’s to remembering all who have died serving our great American Armed forces with Honor and Celebration!
