Some recipes we learn. Some we inherit. This Irish Soda Bread came straight from my mom’s well worn recipe box with smudged ink, flour dust in the corners, and notes in her unmistakable handwriting. It was the loaf she baked for holidays, family gatherings, or just when she wanted the house to feel warm and welcoming. Slightly sweet, tender, and full of plump raisins, this bread has been a family staple for generations. Now it can be part of yours too.

THIS IS WHAT YOU NEED


  • 3 ½ cups sifted flour
  • ⅔ cup sugar
  • 1 teaspoon salt
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 ½ cups raisins
  • 1 tablespoon caraway seeds
  • 2 eggs lightly beaten
  • 1 ⅔ cups buttermilk
  • 2 tablespoons melted butter cooled

 

THIS IS WHAT YOU DO


    1. Preheat : Set your oven to 375°F
    2. Mix the dry ingredients: In a large mixing bowl, combine the flour, sugar, salt, baking powder, baking soda, raisins, and caraway seeds. Stir well so the raisins are fully coated to help them stay suspended in the dough.
    3. Mix the wet ingredients: In a separate bowl, whisk together the eggs, buttermilk, and melted butter until smooth.
    4. Bring it all together: Pour the wet mixture into the dry ingredients and stir until just combined. The batter should be thick but pourable.
    5. Bake: Transfer the batter into a greased loaf pan. Bake at 375°F for 1 hour or until golden brown and a toothpick inserted in the center comes out clean.

Serving Suggestions

  • Slice warm and spread with salted butter.
  • Toast the next morning with berry jam.
  • Serve alongside a cup of tea for an old fashioned afternoon treat.
