There’s just something about the smell of apples, cinnamon, and buttery crumble baking away in the oven that instantly makes a house feel like home. This month, I’m sharing one of my all-time favorite comfort bakes – a Rustic Apple Pie that’s got everything: a flaky golden crust, a sweet-tart apple filling, and a crisp, buttery streusel topping that might just steal the show.
THIS IS WHAT YOU NEED
For the crust:
- 1 homemade or store-bought single pie crust (1 sheet of pie dough)
For the apple filling:
- Zest of ¼ lemon
- Juice from ½ lemon (about 2 tablespoons)
- 5 pounds apples, peeled, cored, and sliced about ⅛-inch thick (about 11-12 large apples)
- ½ cup packed brown sugar
- ½ cup granulated sugar
- ⅓ cup all-purpose flour
- ½ teaspoon kosher salt
- 1½ teaspoons ground cinnamon
- ¾ teaspoon ground nutmeg
- ½ teaspoon ground cardamom (optional, but highly recommended)
- 1 teaspoon vanilla extract
For the streusel topping:
- 1½ cups all-purpose flour
- ⅓ cup granulated sugar
- ¾ cup packed brown sugar
- ½ teaspoon kosher salt
- ¾ cup (1½ sticks) butter, melted
THIS IS WHAT YOU DO
Make the filling: In a large high-sided skillet, combine the lemon zest and juice. Add the sliced apples and toss to coat. Stir in both sugars, flour, salt, cinnamon, nutmeg, and optional cardamom. Cover and cook over medium heat for about 20 minutes, stirring every few minutes, until the apples are fork-tender but still hold their shape. Stir in the vanilla. Spread the filling on a baking sheet to cool completely.
Prep the crust: Roll out your pie dough into a 9-inch pie plate, crimp the edges, and place it in the freezer (or fridge) for 30 minutes. Preheat the oven to 425°F with a baking sheet or pizza stone on the center rack.
Make the streusel: In a medium bowl, whisk together the flour, both sugars, and salt. Drizzle in the melted butter and stir until the mixture is sandy with some larger clumps. Chill briefly while you assemble the pie.
Assemble & bake: Add the chilled apple filling into the prepared crust. Sprinkle with about one-third of the streusel. Bake for 15 minutes at 425°F. Reduce the temperature to 350°F, sprinkle on the remaining streusel, and bake for another 25–35 minutes, until the topping is golden and the crust is browned. Shield the edges with foil if they brown too quickly.
Cool & serve: Let the pie cool on a wire rack for at least 4 hours before slicing
(it’s worth the wait – this keeps the crumble crisp). Serve as is, or with a scoop of vanilla ice cream and a drizzle of caramel sauce.

- Baking on a preheated pizza stone or sheet helps the bottom crust set beautifully.
- This pie freezes well – assemble and freeze with half the crumble, then bake later with a fresh topping.
