When Jay first discovered BubbaKoo’s Burritos, he immediately saw something special. A business partner had launched a location in Connecticut and experienced great success with it, and Jay knew the concept had the potential to thrive somewhere new. Already being involved in the food industry, he felt inspired to bring the brand to Long Island where customers are always looking for fresh ideas and exciting flavors. It was different, it was fun, and most importantly, it offered something that Jay felt the community had not seen yet.

BubbaKoo’s stands out from the typical fast casual burrito scene in several ways. The experience begins the moment a customer steps inside. The restaurants carry a relaxed beachy type of atmosphere, decorated with surfboards, bright green accents, and lively music. For Jay, the goal is simple. He wants customers to feel welcomed, comfortable, and cared for the moment they walk in. Great food matters, but Jay believes that great service and a memorable environment matter just as much. He makes a point to greet visitors personally whenever he is in the store, grateful that they chose his restaurant when there are countless options across Long Island.

Food is where BubbaKoo’s truly sets itself apart. The menu is packed with inventive options that customers do not often see anywhere else, and the wide range of sauces along with the ability to fully customize each meal keeps people coming back. One of the biggest highlights is the hibachi style steak and shrimp, cooked fresh on the grill right in front of the customer, which turns a simple order into an experience. And even with so many choices, Jay has a clear personal favorite. He always recommends the Nashville Hot Chicken Burrito, made with crispy chicken tossed in a bold Nashville inspired sauce, paired with cilantro lime rice, black beans, sour cream, cheese and crunchy pickles, all wrapped in a warm tortilla that brings together heat, texture and comfort in every bite.

Community support has been strong in both Huntington and Hicksville. Jay and his team stay involved by participating in school events, fundraisers, and local partnerships. One of their most meaningful achievements has been converting both locations to full Halal certification. It was a major undertaking that no other BubbaKoo’s in the country had attempted, but it opened the doors for a wider audience while keeping the same great flavors for everyone.

Looking ahead, Jay has big plans. He hopes to open at least ten more locations across Long Island and eventually expand into Queens. For him, nothing is more valuable than word of mouth. When people enjoy the food, they tell their friends, and that is how a brand grows.

For now, Jay is proud of what he has built. Seeing customers return, watching his team succeed, and serving food that people love makes every long day worth it. BubbaKoo’s has brought something new to Long Island, and he is excited to see where the journey takes them next.
