THIS IS WHAT YOU NEED
- 3 cups all-purpose flour
- 2 teaspoons pumpkin spice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 sticks unsalted butter, softened
- 1 1/2 cups light brown sugar
- 1 teaspoon vanilla extract
- 2/3 cup solid packed pumpkin
- 1 egg
- 1 cup chocolate chips
- 1/2 cup granulated sugar (for coating)
- 1 teaspoon each
- Pumpkin spice and cinnamon (for coating)
THIS IS WHAT YOU DO
- Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, pumpkin spice, cinnamon, salt, baking powder, and baking soda.
- In a large bowl, cream the softened butter and brown sugar until light and fluffy.
- Mix in the vanilla, pumpkin, and egg until fully combined.
- Add the dry ingredients to the wet mixture and stir until just combined. Fold in chocolate chips.
- In a small bowl, combine granulated sugar with pumpkin spice and cinnamon for the coating.
- Scoop dough into balls and roll each one in the spiced sugar mixture. Place on baking sheets and bake for 10–12 minutes, until edges are set and centers look soft.
- Cool on the baking sheet for a few minutes, then transfer to a rack to finish cooling.
