THIS IS WHAT YOU NEED


  • 3 cups all-purpose flour
  • 2 teaspoons  pumpkin spice
  • 1 teaspoon  ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 sticks unsalted butter, softened
  • 1 1/2 cups light brown sugar
  • 1 teaspoon vanilla extract
  • 2/3 cup solid packed pumpkin
  • 1 egg
  • 1 cup chocolate chips
  • 1/2 cup granulated sugar (for coating)
  • 1 teaspoon each
  • Pumpkin spice and cinnamon (for coating)

THIS IS WHAT YOU DO


  1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, pumpkin spice, cinnamon, salt, baking powder, and baking soda.
  3. In a large bowl, cream the softened butter and brown sugar until light and fluffy.
  4. Mix in the vanilla, pumpkin, and egg until fully combined.
  5. Add the dry ingredients to the wet mixture and stir until just combined. Fold in chocolate chips.
  6. In a small bowl, combine granulated sugar with pumpkin spice and cinnamon for the coating.
  7. Scoop dough into balls and roll each one in the spiced sugar mixture. Place on baking sheets and bake for 10–12 minutes, until edges are set and centers look soft.
  8. Cool on the baking sheet for a few minutes, then transfer to a rack to finish cooling.
