Gear up for the ~ Barbecue’s, backyards, beaches and Bibbs! Celebrate this Independence Day with all that this 3 Day Weekend ushers in…with splendid reasons to CELEBRATE! Don’t forget the Bibb~ for lobsters, crabs, ribs, and this amazing Bibb Salad Spectacular! Bibb lettuce is really the same lettuce as Boston or Butter lettuce, with its appearance, texture and delicate taste. Bibb is a slightly smaller version of the variety…making it the perfect size for whole individual servings It has a mild, sweet flavor and is packed with essential nutrients and vitamins. Commemorate this 4th of July from coffee at sunrise ~ to happy hour at sunset! This colorful sparkle of “Salad Works” was prepared and presented at our book club gathering by my dear sweet friend, colleague and neighbor~ Kathleen, she surprised us with this beautiful display of greens and fresh edible flowers! 4 Bibb lettuce heads (washed and dried)
4 Asian pears, peeled and thinly sliced,
    doused in lemon juice to prevent browning
Whole pecans caramelized in a sauté pan
    with some pure maple syrup. Heat till 
    bubbling and the pecans caramelize. 
4 oz. of a good imported, Italian crumbled
    gorgonzola cheese (or any blue will do) 
Arrange salad on platter with pears, pecans
    and cheese. Sprinkle with fresh edible
    flowers from your yard

Dress up the bibbs with a light vinaigrette:  Shake up in a jar ~

1 T Dijon mustard
2 T red port wine vinegar
½ cup extra virgin olive oil
Kosher salt and fresh black pepper
4 oz. crumbled blue cheese
1 shallot finely minced 

Feel inspired to add your fresh fine picked herbs ~ (parsley, basil, chives, or chervil)
