A spread for your Bread! This is an easy salsa to serve at your next gathering with baguette slices  ­–an Italian spin on salsa. Great on crackers, pita’s or chips. It’s a great crowd pleaser! You may prepare it a day ahead, just don’t add the fresh mozzarella until you’re ready to serve. Try this delicious salsa  on chicken or fish, in wraps, or tossed with your favorite pasta. This tasty blend works with a multitude of variations and possibilities; my book club just loves when I arrive with this. Festive on your table for every season and for all reasons! 

4-5 cups diced fresh ripe tomatoes
2 Vidalia onions chopped 
½ cup fresh basil chopped
2 T fresh parsley chopped
1 T fresh oregano
1 T fresh chives chopped
8 oz. or more of fresh diced 
   mozzarella
½ cup extra virgin olive oil
Salt and pepper to taste
Pinch of red pepper flakes (optional)
1 baguette loaf of bread sliced thin. Brush with olive oil on both sides 
   and toast lightly.

In large frying pan, sauté onions until soft and translucent. Toss fresh tomatoes in the pan with onions for about 3-4 minutes. Add all fresh herbs and spices and set in a bowl to cool completely before adding diced cheese. Mix together and serve. Enjoy!
