Fall Fun Finds on Long Island

    Every season you can find fun things to do on Long Island. The region is packed with things to do and see during the fall months. Pick the ones that will tickle you, and head out to enjoy them. Though this is, by no means, a full listing of everything to do on the Island during the season ahead, but it should get you started.
    On LI, fall is synonymous with fairs. There are many held locally with crafts, petting zoos, carnival games, shopping, live bands, and yummy treats reflective of the season (roasted corn, caramel apples, and spiced apple cider, just to name a few). Signage abounds as you go from town to town, though a quick Internet search will show you every local event.  For regional or themed events, try Huntington’s Fall Festival or Greenport’s Maritime Festival. Arrive early if you can as parking becomes a challenge as the day goes on.
    If you like the outdoors or good things that come to harvest in fall, head out east to go apple or pumpkin picking. The list of farms on the east end is a big one. At our house, we are partial to Lewin Farms. After we pick our pumpkins and fruit, we head to their farm stand for additional fruits and veggies, along with mums, homemade breads and jams. Yum!
    Interested in some organized Halloween fun? Head over to Old Westbury Gardens for Rise of the Jack O’Lanterns, a display of hundreds of carved pumpkins that never disappoints. How about a child and family-friendly Halloween Party? On Halloween weekend, you can take your costume clad little ones to the Ghostly Gala 2015, a safe and fun trick-or-treating and learning extravaganza. Old Bethpage Restoration Village has an 1800’s Haunted Halloween day with pumpkin carving, ghost tours, costumes and even an afternoon parade. No kids in tow? Up for a good scare? Try NYZ Apocalypse, Gateway’s Haunted Playhouse or The Haunted Castle at Sands Point Preserve.
    Though I am a huge fan of the summer, even I cannot deny the beauty of autumn. The season brings with it more temperate weather and
remarkable colors. To explore some of the beauty of fall, you can pick any of Long Island’s remarkable parks or beaches and meander. Walking through our region in each season will give you a glimpse of the untouched beauty that exists all around us. So, while the weather is quite friendly, stroll through a path, walk along the beach, visit one of LI’s arboretums, or pick another spot that speaks to you. You will be treated to spectacular hues, cool breezes and bright skies. You need not leave Long Island to find nature’s beauty in the fall. It is all around us.

September’s the time for snapper fishing.  Such a favorite pastime for my boys and their friends growing up, but the season is limited.  Just a rod, some bait, and the town dock provided so much excitement in the effort and determination of catching these feisty fish. Snapper fish are named after their “snapping” teeth. What really makes this so much fun is they will feed and strike at almost anything that moves~ making them
easy to catch even for the youngest of kiddies. Snaptastic! Their flavor is sweet and delicate~ no bite here!

Only enjoyed my favorite way when prepared Tuscan Style ~Al” Forno (meaning from the oven) for me~ by Lou at Robke’s Country Inn, or my dear friend Frank, or by me! Using fresh fish found at your local Fish Market, when prepared, and combined with extra virgin olive oil, garlic and fresh garden ingredients, this delicious, versatile dish is one ~even a (non~ fish) lover will love and crave. Low in calories, quite healthy for you and prepared ~Snapity …Snap …Snap!

2 Fresh red snapper fillets (about ½” thick)
3 Large farm ripe tomatoes (chopped into cubes)
6 Large fresh garlic cloves (chopped or thinly sliced) 
¾ cup of flour for dredging filets
¾ cup extra virgin olive oil (reserve a little for a drizzle)
Fresh black pepper and sea salt
1 cup fresh parsley coarsely chopped
1 Large lemon cut into wedges
½ to 1 cup white wine 

Dredge fillets in flour salt and pepper. In a sauté pan heat olive oil and sauté fish on each side to slightly golden crust. Remove and place in ovenproof pan or dish. Preheat oven to 375 degrees. Fish needs to be in oven about 15~20 minutes. While that’s in oven add some oil to sauté pan that you just used, add garlic sauté until soft and slightly golden, add fresh tomatoes and quickly sauté trying to keep tomatoes firm. Add more pepper, salt, fresh parsley, and wine. Plate the fish and spoon on the tomato topping and juices; serve with lemon wedges and of course a nice glass of pignot grigio. Do attempt to dine al’ fresco  with your al’ forno and… snap up these beautiful days of “Indian Summer” enjoy, xo Denise

 

It’s Corn Season!

    For those of you that have followed my articles, seasonal cooking is my passion. With fall slowly coming into view, it’s time for me to think “corny”. 
    I have had, and made, some great corn-based dishes. The first that comes to mind,  is   a corn chowder. I first tasted it at a Spanish tapas place when I was an intern out in the Hamptons. This chowder was one of the most luscious and flavorful “soups” I have ever had. There was bacon, potato, of course corn, and it was topped off with whole shrimp. 
    The chef told me his secret was to steep the corn cobs with the cream and milk on low heat for about an hour to infuse that sweet corn flavor. I will admit that I was so obsessed with this chowder that I went home and recreated it.  I must say, it came pretty close. 
    Corn salad also comes to mind, I once had at a pizzeria of all places on the North Fork. Prepared with red onion, red bell peppers and corn tossed in a light sherry vinaigrette. It is the perfect side to go with pizza, or anything for that matter, this time of year.  It was cool, crisp and flavorful. 
        I sometimes like to stay away from meat, so I need to find dishes that will satisfy me. One that I’ve found is a vegetarian chile relleno;  it is light, but quite fulfilling. It consists of poblano chilies stuffed with charred corn, onions, garlic and jalapenos, topped with melted cheddar cheese. It is so good and full of flavor, you will never miss the meat. 
    Another favorite of mine is pasta in a corn and goat cheese sauce; it sounds fancy, but it is really easy to make. All you have to do is cook any pasta of your choice and reserve some of the cooking water. Then in a separate pan, sauté a finely chopped shallot, a couple of cloves of garlic and a cup of corn kernels. Add the goat cheese with the pasta water then toss with the pasta and you have a quick, delicious meal.
    So, the next time you are at the farmers market or taking a drive out east, grab some corn and enjoy the bounties of Long Island has to offer!

Keeping in touch with family and friends back home is now incredibly easy and inexpensive with the advent of cell phones and apps.  Viber is a free texting and calling app.  You both download it on your smart phones and voila..free texting and phone calls.  Viber isn’t the only app that provides that service, WhatsApp,  Google voice, Google hangouts, Facetime, Skype and Facebook messenger to stay in touch for free.

Another popular travel app is Citymaps2go.  You can download maps from just about any city you will be visiting and then use them on your vacation.  Since the maps are already downloaded on your phone you don’t need Wi-Fi to use them. 

When it comes to booking a hotel you can make sure you get the best price by comparing the rates that you can book on the hotel website to the rates on discount websites such as www.kayak.com.  Kayak is a great site because it shows you the rates on many of the discount sites.  If you find a lower rate within 24 hours of booking, you can file a claim, they confirm it and lower your rate to match it.   As well as making it worth your while to do the extra legwork.  

Marriott’s “Look No Further Guarantee” will not only match the rate but will take off an additional 25%, which is great for a stay of a few days or longer.

If you plan to do a lot of international travel you might consider applying for “Global Entry.” As a pre-screened Global Entry member, you arrive in the United States, check-in at the Global Entry kiosk and you're on your way..  You can apply online at www.cbp.gov, and then have to appear in person for an interview and fingerprinting.  The cost is about $100 for 5 years.  Some credit cards such as a Platinum American Express reimburse you for the $100 if you charge the fee on their card.  Once you have Global Entry you will always be allowed to go on the TSA Pre-check line even if you are not flying internationally.

Help Your Kids Drink (Water) To Their Health

 

(NAPSI)—According to a study in the Nutrition Journal, children between the ages of 4 and 13 should be consuming four to six cups of water per 1,000 calories that they eat. Around 75 percent of dietary water comes from beverages and the remaining 25 percent comes from moisture in foods.

Yet only one in four U.S. children are getting the amount they need. Even mild dehydration can lead to health problems and trouble concentrating. For many parents, however, which drinks to offer their kids—and how to get their kids to drink them—can sometimes be a dilemma.

Here are a few tips to help keep kids happily hydrated:

• Chill out—The U.S. Centers for Disease Control and Prevention says make water more appealing by keeping it cold in the fridge.

• Popsicle me—Make your own wholesome treats. Take fruit juice and pour into Popsicle molds. Pop in the freezer and in an hour or two you’ll have
   a healthful dessert or a mid-afternoon snack.

• Skip the caffeine—Soda may be a liquid but it’s actually dehydrating. A common ingredient in soft drinks is caffeine, which is a diuretic, causing a
   loss of fluids.

• Fruit saves the day—Fruit is a great way to help meet hydration needs, especially water-dense strawberries, grapefruit, cantaloupe, peaches,
   pineapple and, naturally, watermelon.

• Plan ahead—Stash water in your car. Carry water or another drink wherever you go and offer it to your kids when you think they’re thirsty. Even if
   they protest, ask them to take just a few sips. Chances are they’ll drink more.

• Favor the flavor—Add a slice of fruit for flavor. All too often, a major hurdle in getting kids to drink water is taste. A quick and easy way to add
   flavor is to infuse water with fruit. Slice fruit into a decanter of water and in no time you’ll have a tasty drink. Pick one fruit or experiment with a

Long Island Aquarium

If you're looking for a great place to go, I strongly suggest the Long Island Aquarium. It's one of my all time favorite family places to visit. 

They have so many fun events that take place there. To list a few, there are family themed sleepovers, birthday parties, shark dives, sea lion selfies, snorkeling with the fishes, a penguin encounter and aquarium tours. They also offer a unique tour of their amazing rehab facility. As a member of the Aquarium you can receive discounts on most of these events as well as food and gifts. There is also a pontoon boat ride that goes down the Peconic River behind the aquarium. On this boat ride you get to learn all about the sea animals native to our island. During your day at the aquarium stop by one of the sea lion shows, where they perform incredible tricks – you will be amazed. I once did the shark week sleepover and had a blast. We had a tour of the sharks, saw a dissection, and watched a movie. I met a lot of nice people and learned a lot as well. There is an upcoming sleepover called "Creepy Crawly Family Sleepover" Friday, September 25. You'll get up close and personal with some of the creepy crawlers at the aquarium. Volunteers are the heart and soul of the aquarium, so if you're 18 and you're interested, I suggest becoming a volunteer. You only need a minimum of 60 volunteer hours over a 6 month period. The aquarium is a wonderful and amazing fun filled place to visit. Does the Elliptical machine give extra benefits for my workout?

It’s a very common question and some people think it provides extraordinary benefits. I’ve heard things like it’s the best exercise for your heart and the most efficient to get you fit. The truth is that the elliptical machine gives you a good cardiovascular workout for your upper and lower body provided that you put the work into it! What does that mean? For any exercise regimen designed to change your body you must have a significant work INTENSITY (how hard or intense you work) along with FREQUENCY (number of days per week) and DURATION (the amount of time you workout).

The greatest benefit of the Elliptical machine is the smooth elliptical motion movement with a low impact for your lower extremity joints. You are not pounding your joints as you move your legs. Furthermore the Elliptical gives you arm movements with resistance which is great for cross training. Total body movements (both arms and legs) expend or burn more calories. For people with low body joint issues (knees, ankle, and hip) the low impact feature is a great alternative to other types of exercises and movements. 

Compared to the Treadmill and Exercise bike the Elliptical machine is the newer type of movement considered to give you an aerobic workout. Your body doesn’t know what type of exercise you are doing during the times of increased heart rate and muscular skeletal effort. The elliptical machine when combined with other types of equipment helps to relieve the boredom and creates new challenges for your body. You have to put in the time working out in order to gain cardiovascular and caloric expenditure benefits. Classical exercise science taught us a minimum of 22 to 25 minutes of continuous exercise for the heart and lungs to derive benefits. 

The commercial brand Elliptical machines are usually the most popular. The Precor or Lifefitness brands are the most popular in health clubs. In most clubs you can choose between lower body (legs only) verses total body (arms and legs). Either way the bottom line is for you to EXERCISE. Don’t worry what type of machine or which one is the best. Develop your schedule to exercise regularly and in a short period of time you will experience the difference in how you feel physically and psychologically.

    Wallpaper is back with a vengeance and it makes a big change in a room. From “pop” to texture, it all depends on how bold you are or what feeling you’d like to project. I remember my first design assignment. I can’t call it a real job because I was still a design student and the Institute sent me out because the couple couldn’t afford a “real” designer. Petrified as I was, I realized I knew more than they did when I entered their Howard Beach apartment painted with all white walls – and every architectural impediment (soffits, intruding wall indentations, etc.) was covered in blue and green flocked foil wallpaper! That was the 70s (yes, 1970s!) and now the wallpaper industry’s resurgence has attracted a new, do-it-yourself homeowner. And guess what – I often feel as if I should never have thrown out those old wallpaper books!    
    They say that nothing is ever new in decorating – it’s been there before, perhaps with a different spin and wallpaper is a great example. Bold patterns, bright colors, soothing damasks, and interesting textures – they’ve all been around. It all depends on you and how “trendy” you want to be. If your comfort level in paint has been a safe neutral for years, I wouldn’t advise a red and white geometric all over your 2-story entry foyer. But you might experiment with one wall in your guest bedroom. If you’re looking for a change in your master bedroom, and it’s not the furniture, you might try a soft grey and white damask on the walls or a textural grass cloth (remember, those seams between strips are not supposed to match!).
    On do-it-yourself websites and HGTV, they show you how “simple” it is to hang wallpaper. Again – don’t start with your entry foyer. Practice on a large wall in your garage before you venture any project. It’s best, in my opinion, to hire a professional. Observing how many steps it takes to prepare a wall properly before you actually hang the paper might dissuade you.
    A quick flashback again to the 70s – remember that heavy stucco look on the walls and getting injured by the points jutting out? When that trend was over, many homeowners had to deal with the sheetrock coming off with the stucco, or a messy, messy sanding job. (I put wallpaper liner under the stucco and we just pulled!)   
    So, I advise you to do some homework. We, in our design studio, have loads of “new looks” (that actually look really familiar to me). Take a little time to check out what’s out there and find a look you like for a needy space in your home. While wallpaper is an additional expense in labor, materials and removal at some point down the road, it is a welcome companion to a new, fresh paint job, and they can make a world of difference!

 

The Incredible, Medical, Edible Lemon

Let’s first look at what a lemon really is!
A lemon without its peel at about 58 grams, contains about 17 calories, .6 grams of protein, .02 grams of fat, 5.4 grams of carbs which includes (1.6 grams of fiber, 1.5 grams of sugar), 51% of your daily Vitamin C needs as well as trace amounts of thiamin, riboflavin, vitamin B6, pantothenic acid, calcium, iron, magnesium, phosphorus, potassium, copper and manganese.

The medicinal, preventive and nutritional benefits of lemons are due to its high concentration of Vitamins and elements, also lemons are a fruit that contains flavonoids which are antioxidant containing composites which contain cancer fighting properties.

Lemons provide many nutritional,
medicinal and preventive benefits.  Among these are the following:

•     Lemons help in the treatment of throat infections, Gastro-Intestinal issues, respiratory problems and high blood pressure.
•     Lemons also help treat kidney stones and lower the susceptibility to strokes.
•     Lemons have shown to be effective in lower a fever and aid in internal bleeding.
•     Lemons also have the ability to strengthen the immune system cleanse not only your blood buy your stomach and even assist in
      dental problems.
•     Lemons detoxify your body, are a natural energizer, keep skin clear with its high level of vitamin C, balance PH and are a natural
      diuretic.

So is a lemon some kind of miracle food? No it simply has many great Vitamins and elements in it, found in other foods but packs an all in one great punch of its own.

How does it do all this you may ask?

For example:
In lemons, the presence of Vitamin C and citric acid along with calcium and magnesium,  bioflavonoids, pectin, and limonene help to promote immunity and to fight infection.

Because lemon has antiseptic and styptic properties it can work as a coagulant stopping internal bleeding. Just apply a little lemon juice on a small cotton ball and place inside the nose and you can stop a bloody nose! 

With all these benefits how can one go wrong with lemon juice, lemon water, or some hot lemon water which is most effective?

However the one thing I haven’t discussed yet is does lemon water really make you lose weight?

There are many myths all over that say it does. It is true lemons do aid in digestion and they are a natural diuretic which will help you reduce your bloat and water weight.

That being said if you want to believe all these magazine articles, internet blogs, and Facebook sites that say if you jam a pitcher full of some lemons or put some lemon juice on top of your chicken the pounds will melt away, I’m sorry to tell you folks you’re in for a disappointment. There is no miracle food and there is no substation for hard work, a diligent healthy clean diet and living a healthy life style. 
 
Remember fitness is not a destination it’s a way of life!    

 
 

 

Don’t Pack It All Away

     While the cooler days and frosty mornings start creeping in, summer days are becoming a hazy memory.  As we ease into fall,  we slowly retire pieces from our summer wardrobe and grab for the heavy dark colored sweaters and bottoms.  Don’t be in such a hurry to pack away all your summer pieces.  There are certain ones that should remain in your closet year round.
     Multipurpose dresses and skirts, some are a must to keep present.  It’s time to archive any linen dresses, cotton gauze skirts, and pastel shorts. 
     Your basic sheath dress, strapless, evening dress, reds, denims, burnt oranges, navys and teals should all stay put. Simply add a denim jacket, a black or taupe blazer, or a long cream cardigan. Polish your look with an infinity scarf, in any warm fall hue and you’ve just saved yourself a bundle on new dresses and skirts.  
      Don’t be so quick to bury the tank tops and t-shirts.  They are great staples for layering under blazers, jean jackets, and cardigans. Even under sweaters that may have a crochet finish, sheer blouses, tunics or silk blouses and vests.  Don’t under estimate the tank.  
      Obvious basics are white, black, navy, taupe and cream.  These colors will pair with just about any of your fall colors.  We are only changing seasons not quite shoveling snow yet, your instinct to reach for the turtleneck shouldn’t become routine yet. Any cami is worth keeping close at hand, they too can be popped under an array of blouses and crisp buttons down shirts.  The cami is also an easy evening look under a motto jacket or cashmere wrap topped with a statement necklace, very chic.  
     The summer/winter exchange doesn’t have to be an overwhelming dreaded event.  Take a deep breath of the crisp fall air and gracefully enter the new season while keeping a few summer staples in your fall wardrobe.  The colors of the trees are changing and leaves slowly falling.  The new season is inviting you to relish in its beauty.

 

Managing The Job Search Rollercoaster

Like a rollercoaster ride, a job search in today’s ultra-competitive market can make you queasy. Hopefully, you will experience more ups than downs, but truth be told, for all too many job seekers the ride is far more exhausting than exhilarating.

Manage Your Mindset
Managing your mindset is the most important goal to achieve.  Have you ever met anyone who derives pleasure from feeling ignored and being rejected?  Job #1 is staying mentally tough when you have every right to feel anger, frustration and annoyance. When you’re tempted to throw in the towel, do your best to focus on a statistical truth….every resume you’ve submitted that has been ignored is bringing you one step closer to the one that will generate a phone call back.

Simple Plans Are Easy to Execute
You can’t eat an elephant in one bite and you can’t effectively execute an overwhelming job search plan. I encourage you to have a master plan that covers a lot of activities. Then break it down to manageable tasks that you know you are committed to. For example, if you decided to identify all the executive recruiting firms that work within the NY-metro area, then go a step further and make your objective to identify at least 25 a week. If you remained steadfast in your resolve, you’d have been able to send your resume out to 100 firms within 30 days. Focus on getting a few tasks accomplished daily at a very high quality level versus working through a lengthy to do list. 

Avoid Spray and Pray
It may take between 4-9 months for a job seeker to get the role he wants. The “spray and pray” tactic certainly occupies time and enables the job seeker to feel good that they worked for 10 hours and applied to numerous positions. Unfortunately, this approach typically doesn’t get the phone to start ringing which further exasperates the emotional rollercoaster involved in a job search.

Avoid the Crash and Burn Stage
When you’d prefer having a tooth extracted than applying to another job, you’ve reached the crash and burn stage.

Build frequent downtime periods into your overall job search. Make believe you’re working Monday-Friday from 9 to 5. Go at it hard, but when the day is done, relax and try to completely forget about finding a job. Don’t sacrifice your family time to hammer out another resume submittal. 

If you don’t “get off the grid”, all the negative aspects of looking for a job become even more frustrating and eventually, you will reach a point where you can’t seem to motivate yourself to do anything at all.

Stay balanced and mentally strong. Remember that this is a numbers game and like Lotto, “you got to be in it to win it”.

 

Lunch At The Palatial Oheka Castle

    Nestled on the border of Nassau and Suffolk counties, right at the edge of the Town of Huntington, lies one of the most spectacular pieces of Long Island’s Gold Coast heritage: The Otto Kahn Estate, more commonly known as Oheka Castle. 
    Built in 1919 by financier and philanthropist Otto Kahn (who served as the inspiration for the Monopoly man) and later purchased and restored by Long Island businessman and philanthropist Gary Melius, Oheka Castle is listed on the National Register of Historic Places and operates as a world class hotel and event center. In addition to its lodging and event offerings, Oheka provides a unique dining experience that transports patrons to a time long since passed.  
    While Oheka is a place most Long Islanders probably associate with weddings and events, and the rest of the world associates with Taylor Swift, as the Oheka served as the backdrop for the music video for her 2014 song “Blank Space”, the castle is the perfect place to escape on a summer afternoon, or to wow that special someone with an exquisite dinner. Diners are treated to breathtaking views of the historically accurate and meticulously manicured gardens and grounds, along with the classic European style architecture that gives Oheka its unique character. 
    On this trip, I stopped by on a Sunday afternoon to enjoy a late lunch. Soon after being seated, diners are treated to a delicious take on the generic breadbasket that dons many restaurant tables across America: warm, crusty, seasoned bread served with a scallion cheese sauce. A cheese sauce that will seriously have you considering using your spoon to finish off what you missed with the bread. 
    Once you have had a chance to enjoy your crusty bread and heavenly cheese sauce, give the lobster and shrimp meatballs a try. Served with a lobster bisque dipping sauce, these meatballs come packed with nice sized pieces of lobster and shrimp and are fried to perfection. If seafood is not your  thing, the burrata mozzarella is certainly a crowd pleaser, served with sliced beefsteak tomatoes, marinated artichoke hearts, roasted red peppers and a balsamic reduction. 
    When you are ready to move along to your main dish, Oheka offers a variety of dishes, from more traditional entrees to soups, salads and sandwiches. The Kelly Steak, a delicious combination of sliced grilled filet mignon, broccoli rabe, roasted red peppers, tomatoes, caramelized onions and marinara sauce served on a toasted garlic hero was my personal favorite. The steak is cooked to perfection, and the vegetables provide the perfect texture contrast to the steak and warm, crunchy bread.  If you are not a steak fan but are still in the mood for a sandwich, The Elena is a tasty alternative. A delectable combination of grilled chicken, avocado, bruschetta and fresh mozzarella topped with basil oil and a balsamic reduction, it’s a wonderfully balanced dish that leaves diners asking for more. 
    So if you are looking for a unique spot to grab a meal that is not too far from home, not prohibitively expensive and is a virtual time machine, Oheka Castle is the place to be.
