It’s beautiful outside~ get out! Take to the porch or patio by…PIE! With a delicious antipasto pizza pie. I love Friday nights as the work week draws to an end… time to celebrate the full weekend~ “ahoy” Prepare something easy, delicious, and nutritious ~that pairs so well with that glass of wine and the “exhale!” Think of the pizza crust as a blank canvas beholding countless possibilities~ including all your culinary delights. That disk of dough is the perfect platform to showcase your favorite foods, oils, spices, herbs as well as nutritional daily values. Skip the delivery~ create this yourself at home. On Friday nights in the warmer months when the sun shines longer~ I love to start my weekend with this quick and easy pie, a couple of good friends, the porch and a chilled glass of wine. You too can build a better pizza~ start with a fresh dough bought at your favorite pizza place, stretch to fit your pizza pan or stone, brush with olive oil and salt, pepper and fresh herbs. Bake for 6 minutes or until golden brown and crisp in a hot 500 degree oven. Now tackle with your favorite antipasto ingredients, I use fresh mozzarella, salami, hard Italian sausage, marinated mushrooms, red roasted pepper, assortment of sliced hard Italian cheese (pecorino Romano, provolone, fresh arugula, fresh basil, sliced fresh tomatoes, (can use grilled vegetables~ eggplant, zucchini etc.), or “Greek” it up with feta cheese and olives, pepperoncini. Drizzle with olive oil, balsamic vinegar or red wine vinegar or keep it just plain. Get inspired at your favorite Italian deli department or from your local farmers market for seasonal variety.
