Surviving Summer Activities

What is better than summers on Long Island?  Starting around Memorial Day, beach days and barbecues are how many of us spend our summers. We eat, drink and sit in the hot summer sun; we really enjoy the season for all its worth.  In fact, maybe we tend to enjoy it a little too much.  How often do we find ourselves heading back for another hot dog or margarita?  It is so easy to disregard our normal health routine because, let’s face it, Long Island summers feel like a 3 month long vacation!

While it is easy to indulge in all the joys of summer, what‘s not easy is the toll it is taking on your overall health. By September, your fall wardrobe may be a little tighter, you may start to feel sluggish, your immune system may be down and as the weather cools, you may be wondering why you over did it …again.

Enjoy the Memorial Day summer kick off festivities. Bask in all the glory of summer and in June, you should really become more aware of your BBQ blunders.

Get Your Gallon in
Get a gallon of water and use that as a guide. Fill a water bottle, add some lemon or cucumbers in and aim for finishing a gallon a day.  Even if you don’t hit the mark, you’ll likely be plenty hydrated for trying!  Staying hydrated is critical for regulating body temperature and ensuring your entire body is working optimally. You will also notice the more water you drink, the less snacking you’ll do!

Get Your Grill Going
BBQs are for grilling!  Choose from lean proteins like chicken breast, turkey burgers and grilled shrimp. Also consider grilling seasonal veggies on a skewer as a nice appetizer or snack.  Making better choices on the grill will help keep your health in check.

Make Clear Choices
Blended drinks are great in the summer.  Who doesn’t enjoy a refreshing pina colada or daiquiri? The problem is those summer drinks are packed with sugar. Choose clear drinks and you will save a ton of calories and reduce your sugar spikes. Try vodka seltzers or white wine spritzers.

Find Some Fruit
There is always fruit salad at a summer BBQ!  From cantaloupe to kiwi, you’re bound to find fruit on the table. Berries are your best bet as they are high in antioxidants and lower in sugar than the rest.  Watermelon is great for helping hydrate and kiwis are a summer favorite, rich in vitamin C and also lower in sugar.

Get Moving
The first day after a BBQ binge is not the greatest time for a workout but, to keep those extra pounds away, make sure your exercising at least 4 days a week for 30-60 minutes!  Even power walking will help you burn those calories.

Live your best summer life (but really, your better, healthier summer life) this year using these 5 tips. Over-indulging from time to time is not disastrous, so when you do, just get back on track and move on! Happy Barbecuing!

In Honor of My Father

    Though 19 years have gone by since his passing, I have vivid memories of him and the meaningful impact he had on my life. He fulfilled his responsibility as a father, as I fulfilled my devotion and respect for him as a son. In his own quiet way, my father has always been there for me. Though my dad rarely expressed his feelings outright, I never doubted the love he had for me. He would always tell my mother how he felt; she in turn, would share with me my father’s thoughts.
    My father loved everyone and all of 
nature’s beauty. He was a true outdoorsman. I recall stories of my Dad hand feeding turtles and a school of sunfish, that came up to the water’s edge in a canal by their home. He adored nature and respected it–a kind of modern day Dr. Doolittle. Though my father served honorably in the US Army in World War II, we never once spoke about his experiences. I learned after his passing, that my dad earned eight medals for his service. I proudly display them, along with his ceremonial folded flag, in my office.
    My father has been an inspiration to me in so many ways. I’ve learned to look at adversities in my life as nothing more than another hurdle to overcome. I was taught to honor and respect others. Even though people may attempt to hurt me emotionally, sometimes it’s best to just walk away. 
    I have fond memories of dad leading us into the Canadian wilderness, staying in log cabins on a remote lake–just for a bass or pike. These are the experiences that brought our family ties close. I know this, because as my father did, I too have enjoyed similar experiences with my family. Dad brought song into our home too! And what a voice he had. Most said he sounded like “Old Blue Eyes”. I also loved music and had a bit of a rock and roll band growing up. In turn, my love of music has influenced my children. 
    Hard working, honorable and gentle, best describe this man that I loved and miss. In his own quiet way, through our family experiences and his non-conventional way of influencing me, my father truly impacted my life. When he passed 19 years ago, there were no regrets nor guilt. My father made me proud of the man he had become and I made him proud for the man I had become. 
And that makes me feel complete.

Class of 2019 Gift Guide

June has arrived and so has that date in your calendar labeled Graduation. This ceremony’s importance represents moving on from thirteen years of required education to a university, job, or even a year of travel and experience. As with all big life events, gifts are typically given. What to get is often the question. You do not need to spend copious amounts of money to show your graduate love and admiration, but do put thought and care into it. 

Present your graduate with a heartfelt gift; like a framed photo for them to keep as they enter a new chapter in their life. When things get rocky at a new job or college far from home, this gift will provide a familiar warmth and life-long comfort.

There are few hallmarks of spring and summer that catch our eye; like the pop of color Mother Nature gifts us with when the weather warms from the cold, harsh winter. Those colors are the perfect palette for outdoor decorating from springtime through summer’s end. 
    If you like to entertain outdoors, you likely have dishes that provide the focal point for every occasion. Why not choose a new theme each time? Your table can take on new life with some quick changes. Mix flowers with everyday items in your home to give yourself varied options.
    Lemons in the fridge? Add them to a glass bowl with a few friendly daisies (cut the stems down first) for a lovely brunch centerpiece. Choose yellow and white for the balance of the setting: yellow napkins, a daisy on each plate and a white tablecloth or runner down the table’s center.
    Collecting sea shells when you visit the beach? Let them adorn your table – either collectively in a bowl or, if they are large enough, on a mirror for a unique centerpiece. Powder blue place settings and simple white votives will enhance the summertime theme at supper.
    If you happen to have a beautiful garden growing at your home, choose two types of flowers with colors that pair together nicely (pastel pink with a rich magenta or deep orange with yellow) for your upcoming party. Try arrangements that are kept low but full and place them along the length of your table (short glass vases work perfectly here) for a lush look that does not impede conversation across the table. Napkins and a runner will look lovely when matched to one of your two flower colors.
    Crisp whites, done in layers, make a stunning display. From white dishes and linens, to flowers and candles, the varied materials will be visually striking.
    If your yard has a pergola or other shade covering, use stringed lights or an outdoor chandelier to add ambiance and soft lighting for evening entertaining. 
    If you’re using folding chairs and want to step up your game with chair coverings, you can add vine or garland to complement a simpler table setting. It will bring the whole look together, particularly for a  backyard wedding, shower, or other special occasion. 
    Does your yard have other seating like fireside tables or outdoor couches? You can carry your theme to these areas inexpensively with pillows and candles or with an additional, smaller centerpiece to match the one on the dinner table.
    Bring in colors and materials that naturally blend with the season – woods, shells, plants, and citrus fruits (the suggestion with lemons also works well with oranges, limes or grapefruits). 
    Don’t be afraid to experiment. Find small touches to add to your décor at Michaels, HomeGoods or even Pier 1. These small details will surely have an impact and leave an impression on your guests long after they’ve gone home.                 Entertaining is more than the meal. Set the stage with a tablescape that captures the mood and welcomes your guests when they arrive. Have fun!

    Luis Estevez began his career after moving from Spain to
Brazil at the age of 15; where he owned and operated “Cafe Luis” 
for three years before deciding to come to the states in 1968.
    He worked at El Faro in Greenwich, New York for over ten years 
before partnering up and opening “Iberian” in Huntington Village. 
Thirteen years later, he moved to Smithtown where he opened 
“Casa Luis” on his own. 
    Unfortunately, on October 1, 2017, everything the Estevez family worked so hard to accomplish, literally went up in smoke when a car crashed into the restaraunt. Though damage was significant, as Mr. 
Estevez explained, it could have been a lot worse. 
     Today, Luis continues the family tradition by including his wife and daughter to help run the restaraunt alongside him. They have completely renovated the restaraunt and are proud of their remarkable return.  
    Celebrating 30 years of successful business; it is all due to the relationships they maintain with customers and the cozy atmosphere they provide to diners. 

Mariscada in Salsa Verde 
(Seafood in Green Salsa)

Ingredients:
1 Dozen Shrimp                 
1 Dozen Scallops
1/2 Dozen Mussels
1/2 Dozen Clams
Lobster Tails (optional) 
2 tsp. Olive oil
1/2 Large Onion chopped
2 Garlic Cloves minced
1 cup- Fresh Parsley Chopped
2 tbsp- White Flour
1/2 Cup- Sherry Cooking Wine
1 Cup- Seafood Stock
1  pinch- Sea Salt
method:

In a pan on medium heat, mix olive oil, onions, 
garlic, parsley and seafood together. Sauté 
mixture for 5 minutes on medium to high heat. 
Add flour and wine into mix and stir ingredients 
together until sauce thickens slightly, for about 2 
minutes. Add seafood stock and salt (pinch, or to taste).  Cover and lower heat to low medium, cook for about 15 minutes or until clams open. This dish is best when served over yellow rice and a glass of red wine.

Robke’s Restaurant Review

Eating at Robke’s in Northport brings me back to my grandpa’s kitchen. Organized chaos upon entry, yet overwhelming in the best way possible. The keyholder, the maître de, anchors the front of the house as patrons wait for a table, or even a seat at the bar. You can drink while you wait, or you can people watch – from inside or outside, it’s reminiscent of a Long Island block party– complete with locals and cold drinks.
    Once you’re in, the real fun begins. The servers emerge reminiscent of the truest old school New Yorkers – honest, and to the point. There’s no fussing around here, and it’s best to trust their suggestions. The specials range from fish to pasta to steak – and everything in between. We started with the seafood salad – scungilli, scallops, shrimp, celery, peppers, and more in this colorful, classic appetizer. Each bite brought me back to Christmas Eve at my grandparents – making the seafood salad, step by step, with my aunt and my grandpa. Next, we shared the spicy shrimp. Same experience, this time reminiscent of my grandpa’s baked shrimp. Simple, flavorful, cooked perfectly – served with a tangy, spicy cocktail sauce and large lemon wedges. This will be an appetizer that I order frequently!
    When you finally reach the entrees, good luck choosing just one. Seriously, there are so many to choose from. It’s overwhelming but best to trust your gut. We sampled the Baked Red Snapper, Pappardelle Segretta, and Chicken Scarpariello. First off, let’s talk serving size. Enormous, homestyle, Italian plates – sometimes with equally colossal sides of pasta or vegetables. Not only do you receive quantity, but quality. I’m talking rich, meaty veal sauce covering al dente noodles – sublime. Meaty, buttery fish dressed in a gorgeous, savory sauce and lightly cooked tomatoes. Each bite better than the last. My boyfriend and I were kicking ourselves for having waited so long to try Robke’s. We live in Northport, and it’s a quick five-minute walk to this wonderful, family establishment. The true, final test? We visited Robke’s the next night with my dad – the realest old school Italian we know, straight from Brooklyn. The verdict? He can’t wait to go back. 
    For our next visit, we’re hoping to try the Gnocchi, their famous mac & cheese with steak, and Stuffed Mushrooms with Crabmeat. If you’re going to give this place a shot, make sure to call ahead, be prepared to wait 15-20 minutes and have a drink if you’re visiting during peak days/times. If you appreciate homestyle Italian dishes, a cozy seating plan & a family atmosphere – Robke’s is the place for you. Run, don’t walk.

 

SIde Kicks…for the GRILL

Tis’ the season of easy living, grilling, and chilling! Our local farm stands and farmers markets are proudly displaying the earth’s finest.  Summer days are sunny and simple and so should your meals be too. Any fresh vegetable or combination will make for great side~kicks to any grilled meal. Take time to check out your local farm stands and farmer’s markets as they are now displaying the earth’s bounty~ boasting with vibrant colors, tastes and varieties. A wonderful way to support your local growers and add health and well-being to your summer. Leave those cans on the shelf for now. I stopped at the German butcher first for those delicious hot dogs and then to the farm stand for the rest ~  warm German potato salad was my first thought. This salad goes well with anything you grill up. Bacon gives this salad its boost of flavor. The combination of vinegar and sugar dressing gives the salad a perfect salty, slightly sweet tangy flavor. Oh and for the other kicks ~ I decided on a delicious baby cucumber and colorful heirloom tomato salad with oil and vinegar. Of course some corn on the cob~in season now.  Steam the corn in ½ pot of boiling water to which you added a cup of milk and ½ stick of butter. Delicious method, sprinkle with salt and pepper. Wow!  The string beans looked so fresh … I steamed them and mixed with my homemade tomato sauce and sprinkled with some grated cheese. Yummy!  Kick things up with cold or warm sides! German Potato Salad

    6-8 Yukon Gold or Red skinned potatoes (peeled and chopped into 1” pieces, placed into a pot covered with 2” water, boil; for 10 minutes until tender, drain, and cool.  
    In a skillet pan fry 6 thick slices of bacon until crisp, remove from pan and place on paper towels. When cool chop or crumble.  
    Peel and chop 3 shallots and place back into skillet with bacon drippings and sauté until soft and golden. 
    Add 1 Tablespoon of white wine vinegar and 2 Tablespoons of water, 1 t salt, 1 t of sugar, fresh ground black pepper and stir mixture until it comes to a low boil. 
    Toss with potatoes and chopped parsley and chives.) Toss and top with bacon. Serve warm.

 

Remembering MOM

    Mother’s Day, by far is the most celebrated holiday of the year. Honoring love of country or an historic political figure, never seems to match up to the level of attention of Mom. There is a 
sense of duty on Mothers Day. From the moment we wake up, till we are ready to turn in, we work hard to make it special. A day to show our appreciation for the person who has the toughest job on earth…balancing family and for most, their careers. 
    What is it about Mom that war- rants such pampering and attention on this day? The answer is clear. She delivers life. The one that carries and nurtures from our birth till her death. 
    A life's journey that is driven her to care for us to encourage and devote her life's work to us and family. It's a big job to keep it all tied together. She is the iconic anchor, and foundation, deeply rooted, keeping family values intact. 
    My earliest remembrance of Mom was her coming to open school day. It was a time when the parents had the chance to observe our class, while it was being conducted. I was eight years old. As my mother entered the class- room, I remember saying to myself,  how beautiful she looked! How blessed I was to have such a Mom. "Yup, that's my Mom"  I'd say to my buds, as I proudly showed her off. 
     Though my mother worked a full time job, there was always a deliciously prepared home cooked meal on the table every single day. It was important back then for the family to join at "dinner time"! Yes, we live in a different world today! It's getting even harder in today's world to be a Mom. 
    I also remember the times when I was unsure of myself. The times when there was doubt about my ability. To realize and understand that life has it's obstacles and that there is always a new path that can be taken, to reach greener pastures. For me, it was her belief and encouragement that has left an indelible mark on my character. 
    Mom was my best friend. She was my confidant, my support system. The one person, above all that would unselfishly sacrifice her time and love to nurture. 
    The maternal mission of Mom is to keep her family strong. It is why I raise my arm and proudly salute all Moms for your love, devotion and faith in keeping the sanctuary of family alive.

    Miss you dearly.

Every woman is a complex combination of love, ambitions and interests, so I expect you may have said, “Yes” to several of these. It’s not about choosing all of them…it’s about selecting something from among her passions. It is about showing her that you know who she is and appreciate all of her.

If, perhaps, she is wild at heart, feed her desire for adventure with a zip lining experience, sky diving or a day of driving exotic cars.

Paint or Plant nights are very popular and typically come complete with a glass or two of wine – a combination that provides a fun and creative evening.

Gift Basket companies have great pre-made options from which you can choose, something with goodies that you know she will enjoy. Many also offer custom options where they can build a basket with her favorite things. The price includes the items in the basket, along with the services of putting the basket together and ensuring delivery.

Consider a handbag she has been admiring, or a new piece of tech to help her feel on top of her game. 

Sometimes, it is the most personal DIY gifts that have the greatest impact. Framing a child’s drawing may create a gift that will bring a mom to tears; a handmade craft just for Grandma may provide the perfect sentiment. Whether she is nearby or far away, an old photo from childhood imposed onto a pillow or blanket may be the exact gift to warm your sister’s heart.

If it’s entertainment she craves, bring her out for dinner and a show. Help her make a memory she will not forget.

Spring Tune-up For Mind & Body

    Now is the time to check off those items on your list before you 
are called outside for those outdoor projects. Happy Spring!

    The snow has finally fallen and the spring birds have begun their mating calls.  We’ve pushed our clocks forward an hour after spring equinox on Wednesday, March 20.  As the warm days beckon us outside, it’s time to rejuvenate your mind and body.
     Complete those indoor tasks.  Maybe you and your loved one had some winter projects on your to-do list like painting that spare bedroom or changing the vanity in the guest bathroom.  Maybe you wanted to clean out the basement of old toys and games your children have outgrown.  Or, maybe you wanted to organize your desk so that when the nice weather arrives, you’re not left with a mess inside.  Well…now’s the time to get it done.
    Make those phone calls.  Perhaps you had a mental list of family and friends you wanted to catch up with but have been too busy.  Mark off an evening after dinner where you can do so uninterrupted.  There’s nothing better than reconnecting with a loved one while sipping on a cup of hot cocoa or tea.  You’ll both feel better making that special connection.
    Clean out your closets.  Haven’t worn those winter sweaters you’ve been holding onto for years?  Now’s the time to make a generous pile and donate to your favorite charity or local thrift shop.  It’s also the perfect opportunity to try on your spring and summer wardrobe to see what fits comfortably and what’s still in fashion.  
    List your goals for the coming season.  Want to find a new volunteer opportunity?  Check out VolunteerMatch.com, the largest network in the nonprofit world, or look in your local papers for places you’d like to become involved with.  My neighbor and I have been volunteering at Sweetbriar Nature Center in Smithtown for the past five years maintaining its outdoor trails.  We bring our weekly scraps of fruits and vegetables to feed the goats there.  Or maybe you’d like to help a young child with their homework in an after-school homework help program.  There are also plenty of weekend community programs where you and your family can help clean up a beach or park. 
    His and her spa day.  Treat yourself and your loved one to a day of aromatherapy and massages before you get ready to get your hands dirty planting in the garden.
