Beach Bag Necessities This Summer

As the sun finally gets hotter and hotter, people are itching to go to the beach. I don’t know about you, but all winter I’ve been craving a hot beach day. Winter is nice, but nothing beats sand between my toes, salt water in my hair, and the sun on my face. Every summer my go to is a beach bag filled with all the necessary summer essentials. Packing for a quick beach trip or a sun-filled vacation can be stressful, but here are some must-haves every girl needs in her beach bag this summer.
    This is a no brainer, but first you need an awesome bag. Make sure you select a tote that’s big enough to fit all your essentials and sturdy enough to last the season. Target, T.J. Maxx, Aerie, and Nords trom are great stores to check out to find that perfect bag. Another great summer necessity is the NKD SKN Pre-Shower Tan. This lotion is the easiest way to get the perfect tan. Apply the lotion 10 minutes before showering and it leaves you with a great base tan! 
    Some givens for the perfect beach bag include sunscreen, lip protectant, sunglasses, and a cute beach towel. Be sure to use a sunscreen that is suitable for your skin type and that has the proper UV protection. Lip protectant can be a facial sunscreen or a lip balm with SPF. 
    For sunglasses, be sure to buy a pair that is dependable to last. Rayban sunglasses are always a great idea for summer shades. While you’re lounging in the sand soaking up the sun, it’s always a good idea to bring a great summer book or a speaker to listen to music with friends.

Tis’ the season of easy living, grilling, and chilling! Our local farm stands and farmers markets are proudly displaying the earth’s finest.  Summer days are sunny and simple and so should your meals be too. Any fresh vegetable or combination will make for great side~kicks to any grilled meal. Take time to check out your local farm stands and farmer’s markets as they are now displaying the earth’s bounty~ boasting with vibrant colors, tastes and varieties. A wonderful way to support your local growers and add health and well-being to your summer. Leave those cans on the shelf for now. I stopped at the German butcher first for those delicious hot dogs and then to the farm stand for the rest ~  warm German potato salad was my first thought. This salad goes well with anything you grill up. Bacon gives this salad its boost of flavor. The combination of vinegar and sugar dressing gives the salad a perfect salty, slightly sweet tangy flavor. Oh and for the other kicks ~ I decided on a delicious baby cucumber and colorful heirloom tomato salad with oil and vinegar. Of course some corn on the cob~in season now.  Steam the corn in ½ pot of boiling water to which you added a cup of milk and ½ stick of butter. Delicious method, sprinkle with salt and pepper. Wow!  The string beans looked so fresh … I steamed them and mixed with my homemade tomato sauce and sprinkled with some grated cheese. Yummy!  Kick things up with cold or warm sides! German Potato Salad

6-8 Yukon Gold or Red skinned potatoes (peeled and chopped into 1” pieces, placed into a pot covered with 2” water, boil; for 10 minutes until tender, drain, and cool.  In a skillet pan fry 6 thick slices of bacon until crisp, remove from pan and place on paper towels. When cool chop or crumble.  Peel and chop 3 shallots and place back into skillet with bacon drippings and sauté until soft and golden. Add 1 Tablespoon of white wine vinegar and 2 Tablespoons of water, 1 t salt, 1 t of sugar, fresh ground black pepper and stir mixture until it comes to a low boil. Toss with potatoes and chopped parsley and chives.) Toss and top with bacon. Serve warm.

    It's difficult to find good BBQ on Long Island. Some of my favorite culinary adventures to date have been Southern cuisine. I'm talking "Shrimp and Grits" and "Nashville Hot Chicken". My most recent trip to Louisiana solidified my love for all things BBQ, reminding me of the beauty that lies within simplicity. 
    The latest gastronomic brainchild engineered by the folks at Vauxhall, is necessary. Not only is it necessary, but a truly magical dining experience. Chef, and partner, Michael Meehan's passion is evident through the menu selections and overall culinary style. Fried Green Tomatoes, Hush Puppies, Nashville Hot Chicken, and so much more. 
    Upon entering RADIO RADIO, you're digging the atmosphere. It's familiar, yet eccentric. One of my favorite things about these restauranteurs is the emphasis on detail. Everything from the silverware, to the glasses, to the wall art is hand selected. Nothing is there to merely fill space, instead, the details tell a story of the establishment and the passion project that is RADIO RADIO. 
    My guest and I enjoyed the Hush Puppies, Green Tomatoes, and Grilled Caesar to start. With Meehan in the kitchen, I always know what I'm getting. Exciting flavors, exquisite presentation – dishes that keep me on my toes. For our main course we shared brisket, ribs and the Nashville Hot Chicken. My friend Sean, a frequenter of Southern Cuisine at his Grannie's house, is excited about the Hot Chicken. I personally prefer the brisket, with a side of mac and cheese. Seriously good. Pro tip? Ask for the sauce caddy. Try the mustard. It's unreal. 
    If you don't have time for a bite, opt for a drink at the bar.  The drink menu here is just as worthy of discussion as the food. As a self-proclaimed cocktail officianto I consider this team of bartenders and managers one of the best on the Island – if not the best. Think seriously inventive concoctions, whether you order on the menu or inquire about a one-of-a-kind creation. Although their juleps are buzz worthy, I prefer the Smoked Bourbon Old Fashioned and Southern Strawberry. If you like well crafted cocktails, I suggest you visit this place as soon as possible.
    I've been lucky enough to acquaint myself with the folks behind RADIO RADIO for about a year now. They are good guys, who value great food. It's so refreshing to enjoy a pleasant dining experience with friends, but more so, to know that I can whole-heartedly recommend this establishment to friends and family and rest assured that they will love it. If you're looking for something new, or feel like switching it up, or maybe you just love BBQ – head to RADIO RADIO in Huntington. You won't be disappointed.

 

Improve Posture For Better Health

    Few things are as overlooked and yet absolutely critical to our health and well-being as our posture. Becoming aware of how we sit, stand and move we can start to make changes that can improve not only our posture but our health as well. Having good posture is not just about looking better but may prevent such problems as back pain, headaches, TMJ, muscle imbalances, as well as respiratory and circulatory issues. 
    Yoga teaches us to focus on proper alignment of the spine by learning to stack our joints from the base up. Modern life makes having good posture difficult with so much time spent driving, sitting at desks, using computers and handheld devices. These activities can weaken the muscles in our upper back and put a strain on our joints, especially the cervical spine. In addition, when the chest is rounded forward, the lungs are not able to receive the breath fully which can lead to other problems such as depression and poor memory.
    The good news is that poor posture is a habit that can be changed through body awareness. We first need to notice our posture at different times during the day to see if we are out of alignment. If so, making some of these simple adjustments may help:
    1. Keep feet firmly placed on the floor when sitting or standing. If you have trouble keeping your feet on the floor while sitting use a prop for support
    2. Keep pelvis in neutral (not tucked or tilted) when standing and slightly tilted forward when sitting to support the natural curve of the lumbar
    3. Keep Sternum (chest) forward; engage abdominal and upper back muscles
    4. Roll shoulders back and down (they’re often elevated and rounded forward)
    5. Bring head in line with the spine and keep chin parallel with the floor
    Here are some postural exercises to strengthen the muscles of the neck and shoulders that may help to keep the body in an upright position:
    Chin Tuck – Start with neutral spine and shoulders rolled back and down. While looking straight ahead, place two fingers on chin and move your head back, tucking chin downward (creating a double chin). Hold 3-5 seconds and repeat 10 times.
    Wall Angel – This works best against the wall but can be done sitting or standing. Bring arms up with elbows bent so that your upper arms are parallel with the floor. Squeeze shoulder blades together to form a letter “W”. Hold 3 seconds, 2-3 times.
    Chest Expansion – Stand or sit with arms extended behind you and interlace fingers or hold onto a strap. Relax shoulders and keep head in line with spine (be sure not to strain shoulder joints in this position). Hold 10 seconds taking several deep breaths.
    If we can begin to pay attention to our habits and make simple adjustments, we may be able to reverse some of our postural problems and possibly prevent health issues in the future. Our intention in yoga is not to achieve perfection but to become more aware of how we move and find alignment that makes us feel strong and comfortable in our own bodies.

Hi Mary,
Answer: 
    To keep the stress down and feel that having fun and enjoying your guests is the first order on the menu, begin with a very late “spring cleaning.”  An orderly, organized home is the first way to not draw attention to your un-remodeled kitchen and bath or “need-to-be-replaced” furniture.  Next some colorful powder bath accessories, paper hand towels, candles and potpourri can cheer up your powder or guest bath.  Replace burned out light bulbs and fix that leaky faucet.  A coat of paint and wallpaper can also do wonders for a guest room that is generally small enough to make this a do-it-yourself project.
    What about a new area rug in your entry foyer to brighten things up and some fun colorful throw pillows on your sofa or a colorful throw to cover a weary chair?  A “bed in a bag” gives you a whole new look for any bedroom with matching dust ruffles, throw pillows and even draperies.  For a very little investment, these summery spreads and “go-withs” can transform any bedroom, whether guest to master.
    By the way, your outdoor patio can become an extension of you living space.  Stores like Pier 1 and Bed Bath and Beyond have inexpensive tableware, candles and fun accessories, as well as lanterns and other light sources.  Fire-pits and televisions and outdoor sound systems will carry your entertaining through the evening hours.  Outdoor sofas and chairs can be as comfortable and designer looking as indoor.  Invest in an inexpensive storage bench and you will add seating as well as have a place to keep your cushions when not in use.
    Greening your home with summer plants and fresh flowers is a wonderful way to bring color and renewed life into any room.  Treat yourself to a fresh bouquet as a table centerpiece each Friday and weekend visitors will enjoy them, as well, perhaps you may only have to go as far as your own garden to get them.  And why not think about an herb or vegetable garden?  Whether your space is larger or small, this can easily be accomplished with tasty as well as colorful results.
    Visitors in your kitchen should see clean counters and a table covered by a lovely cloth or festive placemats.  If your flooring isn’t the greatest, perhaps a whimsical area rug (Roosters or Chefs always make people smile) can be your camouflage.
    Most of all, do a really good cleanup and purge.  Sort, put away and give away.  You’d be surprised how much “hidden” space you can find – then plan ahead for the get together you want to have so you won’t be pressured at the last minute.   Remember, informal doesn’t mean disorganized – and if doing it all yourself is too difficult or expensive, ask your guests to bring a dish and they’ll feel included, not put out.  So prepare now and I know you’ll enjoy the summer ahead.

Contenders Vs. Pretenders – An MLB Half Season Look

    The Cubs will roll everybody. The Mets pitchers would stay healthy and this would be their year, much like it was for the Cubs. The Giants fresh off a playoff series win vs the Mets got their star closer and were ready to take on the NL’s best. These were all stories going into the season that many believed would turn out to be true. The Cubs have experienced the World Series “hangover” of winning a title and having everything go your way to struggling the next year in many areas. The Mets… ahh the Mets. What would an MLB season be without the Mets being the talk of the league and for all the wrong reasons? Injuries have returned to important pieces like Matt Harvey, Yoenis Cespedes (missed 37 games), Neil Walker, Asdrubal Cabrera and Noah Syndergaard, along with 51 save closer, Jeurys Familia. The Mets need to figure out why this continues to occur to their players, as no team loses more core players each year than them. The Giants signed Mark Melancon to a four-year deal worth $62M in the offseason. The Giants team era is still high and they lost superstar starter Madison Bumgarner long term due to a dirt bike incident in-season. Out of these three teams, it seems likely the Cubs will find their form and grab a playoff berth. As for the Mets and Giants, luck will have to turn in favor of them as they head to the finish line during the second half of the season.
    The surprise of the league has easily been the New York Yankees. Yep, Mets fans were riding high off that 2015 World Series run and thought New York had turned orange and blue. Not so fast. The Yankees sold high last year knowing their chances of making a run were slim and dealt stud closers, Aroldis Chapman and Andrew Miller which netted them top prospects like Gleyber Torres and Clint Frazier who hope to make an impact for the next decade or more. Aaron Judge struggled last year chasing pitches everywhere and struck out at an alarming 44% of the time in 2016 in a 27 game campaign. This year he is seeing the strike zone better and is destroying anything that is tossed over the plate. He is on a torrid pace. It looks like the Yankees have their franchise star to build around for the next decade. 
    With many more games to play (~97 more at the time of writing this), there is enough time for some clubs to turn it around and get going. The AL East is still a tight race, the NL East seems to be Washington’s as long as Daniel Murphy and Bryce Harper stay healthy lead by flame-throwing right-handed starter, Max Scherzer. The Astros also look like they have the AL West easily locked up. 

 

Looks Like I Picked The Wrong Week To…

    Do you remember the movie:  “Airplane”?  Do you recall the frenetic police chief, played by the famous and absolutely hysterical Lloyd Bridges?  I certainly do, and I must tell you, the older I get and the more frenetic my life becomes, the more often I go back to his outrageous but hilariously on-point declarations.  In actuality, his character referenced “quitting “ a host of very unsavory and socially unacceptable habits, all of which he possessed as a means to cope with stress.  As funny and irreverent as these notions were, they do speak to one’s need for “assistance” when dealing with the chaos and turmoil of our lives.
     Of course, life doesn’t only entail emotional, physical and mental mayhem, but it certainly does pack a wallop on a fairly regular basis.  For goodness sake, anyone entering their “midlife” stages, while parenting a child in the throes of “teenagedom” might consider doing far worse than what Bridges’ character suggested!  Honestly, it’s a wonder how we survive on a day-to-day basis!  Stress levels can easily hit the roof, several times a day, and we must figure out ways to deal effectively, productively and legally with it.  But I digress  . . .
     In all seriousness, I am a firm advocate of self-help practices, such as meditation, visualization, deep breathing, exercise, and when all else fails, chocolate!  Somehow, nothing hits the spot quite like chocolate; in fact, I would argue it could easily trump all else.  But, when none of the above is available or feasible, I would highly recommend removing oneself from the situation (even if just for a few minutes), in order to clear your head and salvage your dignity.  Teenagers can provoke you in ways you never thought possible, before.  Daily aggravation with work, relationships, household obligations, social commitments and just being alive, can all take a toll on your already fragile state.  It takes just one too many episodes of watching yourself unravel and seeing the look of horror, disdain and disbelief on the faces of your loved ones to enlighten you to the fact that you’d “really better chill”, before you simply cannot recover any semblance of credibility or self-worth.
     Stress is a constant in our world.  At times, we feel it very palpably; at times, it just kind of hums alongside our daily activities.  Depending on our emotional state, the amount of sleep we’ve had (or haven’t had), the diet we’ve been keeping and the level of positivity we are experiencing in our lives (to balance out the equation), we will either rise above the bedlam, or succumb to it.  Forewarned is forearmed, as they say.  Being in tune to our triggers and knowing ways to circumvent stressors will go a long way in preventing meltdowns, both for us and for our loved ones.  Regularly employing good, solid stress reduction practices can greatly assist us in becoming successful advocates for ourselves, positive role models for others (children, are you listening?), and keep us from being added to the ranks of social misfits.  Let this be “the right week for choosing peace and restraint”, and remember . . . when all else fails, there’s always chocolate!  

 

Savory Eats: Copenhagen Bakery & Cafe

    Copenhagen Bakery & Cafe is one of Long Island’s most underrated, hidden treasures. Upon entering this waterside, international-inspired oasis, you’re greeted by smiling faces and delightful aromas of freshly baked breads and pastries alike. Whether you're in the mood for a hearty breakfast, light lunch or quick snack – this bakery (and cafe) has something for you – all at a reasonable price.
    On my routine Sunday morning visit, I stick to the Copenhagen Omelette or an Egg Sandwich. Their breakfast menu consists of fan-favorites such as Waffles, Pancakes, French Toast, Eggs Benedict, Egg Sandwiches, Breakfast Burrito, Omelettes and Crepes. Everything is sensibly priced under $10, excluding the large omelette which is a mere $10.95. 
    Apart from quality ingredients and a warm, inviting atmosphere, I visit Copenhagen weekly for their bread. That's right, the bread. Their piping hot, sweet and sometimes savory, hearty crusted, notably flavorful, breads. Whether I order Country French, Cranberry Walnut, Sunflower or Sweet Potato – I have never been let down. They have loaves and rolls, and I generally opt for my egg sandwich on a Sweet Potato Roll. (To say it's good is an understatement.)
    Their lunch menu is simple and to the point.  Their “Veggie Burger” is a black bean burger with red onion, avocado, tomato salsa, and romaine lettuce. If meat is what you seek, their “Barbecue Pulled Pork Wrap” is out of this world – served with cheddar cheese, creamy jalapeno and dill dressing, cucumber salad, coleslaw and homemade potato chips. The “San Francisco BLT” is a classic while "The Dutchman" is a more adventurous mix of roast beef, caramelized onions, mushrooms, cheddar, mayo and a hint of hot sauce on a French baguette. Lastly the "Monte Cristo", an audacious combination of ham, Gruyere cheese, and honey mustard aioli and their in-house “Grilled Cheese”, a savory, oozing blend of cheddar, American and Gruyere. All lunch items are under $11 and served with sweet potato chips, homemade potato chips, coleslaw or cucumber salad. 
    Since 1998, Copenhagen Bakery and Café has been providing quality goods, with a special attention to their roots – showcased through their in-house Scandinavian specialties. Customer favorites include their Almond Bear Claw, Almond Horn and Danishes.
    Everything they make is “prepared without preservatives and baked fresh every day; [even the] whipped cream is 100% dairy and the breads are always made the morning of and never sold the next day.” This attention to detail and quality assurance sets them apart from every bakery in a relevant vicinity. 
    They are open Monday through Saturday, 5:30 a.m. to 6 p.m. and Sunday, 5:30 a.m. to 4:30 p.m. – nestled on the water, in Northport Village. I wholeheartedly recommend Copenhagen Bakery and Café, and urge you to visit them for a meal in the near future.

Commemorate this 4th of July from coffee at sunrise ~ to happy hour at sunset! This colorful sparkle of “Salad Works” was prepared and presented at our book club gathering by my dear sweet friend, colleague and neighbor~ Kathleen, she surprised us with this beautiful display of greens and fresh edible flowers! 4 Bibb lettuce heads (washed and dried)
4 Asian pears, peeled and thinly sliced,
    doused in lemon juice to prevent browning
Whole pecans caramelized in a sauté pan
    with some pure maple syrup. Heat till 
    bubbling and the pecans caramelize. 
4 oz. of a good imported, Italian crumbled
    gorgonzola cheese (or any blue will do) 
Arrange salad on platter with pears, pecans
    and cheese. Sprinkle with fresh edible
    flowers from your yard

Dress up the bibbs with a light vinaigrette:  Shake up in a jar ~

1 T Dijon mustard
2 T red port wine vinegar
½ cup extra virgin olive oil
Kosher salt and fresh black pepper
4 oz. crumbled blue cheese
1 shallot finely minced 

Feel inspired to add your fresh fine picked herbs ~ (parsley, basil, chives, or chervil)

 

Summertime Crafting

Summertime is when I really get to dive into crafting. I step away from the home decor and repair DIYs and just play. I can experiment, make frivolous, fun projects and when they let me, involve my kids. 

One of my favorite summer crafts, and theirs, is painting rocks. I don't have a fancy tutorial for this one, since it’s a pretty basic concept, but for the best results here's what I do. 

I start by gathering rocks. The more diverse the collection, the more choices you'll have when it comes to design. The most important consideration is that they all have a relatively smooth surface for painting. 

Next, I wash! A plain water rinse works just fine. Then I let them air dry, so they will be free of any dust or lint. Once debris gets caught in a paint brush, it's a mess to get rid of.  

While the rocks are drying, I choose a design. I brainstorm ideas, check Pinterest or children’s books. The choices are truly limitless, regardless of your interests, age and/ or skill level. 

Once I have settled on what I’m going to paint, it’s time to dig in. It’s actually easier than you think to get professional results.
Start by applying a base coat with plain craft paint and a bristle brush, instead of foam. They are better for detail work and don’t leave bubbles behind. 

If you are not confident in your freehand skills, you can trace or sketch your design onto the newly painted surface with a pencil. 

Don't be afraid to add your own accents to your artwork and if you make a mistake a little water will take the wet paint right off. I use pointed q-tips, to erase paint in tight spots. 

When done, I always add a top coat of decoupage or glitter gel to seal and protect and make my rocks shine.  

That’s it, that’s all it takes for a masterpiece in minutes.  The rocks are great little decor accents for the everyday and holidays and make cute personalized gifts for birthdays, baby and wedding showers, anniversaries, graduations… think initials, years, school names, logos. You don't need to paint a picture. There is no end to what you can put on a rock. If you can dream it, you can paint it. 

No right, no wrong, no rules. And I love that. 
Especially in summer!  

 

Science Mutilated Watermelons

Early summertime, and what do my eyes behold as I walk into Trader Joe? The food market already had Watermelons! My favorite fruit since I can remember. I immediately checked for the light tan spot on one side of the watermelon that proves that this melon ripened while still on the vine. These melons were grown in Florida, had a nice sound and look, so I purchased one.

That evening I cut open the melon, set aside the skin to compost later, and sat down with a big bowl of watermelon as I watch the Big Bang Theory. I placed a piece in my mouth and… Science has mutilated our watermelons!

I have had it with Genetically Modified food, also known as GMOs. Science and greed took away the amazing refreshing taste of watermelons! The watermelon had no taste! Yes, the melon was ripe and filled with color, but hard to chew. Watermelons that didn't taste like anything had become commonplace. Believe me, I know watermelons, and I remember what they tasted like once upon a time before all this genetically modified crap.

First, they modified watermelons to get rid of the seeds, but I enjoyed spitting out the seeds and made a game of it when young. Seeds also allowed us to plant our own watermelons in the backyard.

Second, they modified watermelons to give us more melon and less skin. The skin is so thin now, that insects have an easier time getting through.

Third, they reduced the thickness of the Rind so we can have more melon. I loved getting a little Rind in two or three bites per slice. The Rind has vitamins and according to the Journal of the Science of Food and Agriculture, plays a role in fighting toxins and free radicals. Also, the converted amino acid provides heart and immune system protection.

In addition, researchers have found that eating Rind and adding to smoothies, leads to 30% less weight gain, while having the ability to boost blood flow by relaxing blood vessels. This has been referred to as a natural viagra.

But now, these GMO watermelons are always hard, have NO Seeds, virtually NO Rind, and NO taste! What is the use of having more melon to eat when there is no taste to be found, no beneficial Rind, or seeds?

Young people of today, have no idea about how they are being ripped off and deceived. They think this is how watermelon taste… No, no it doesn't. I want my real watermelons back!

So for all of you out there who think science has all the answers, No, no it doesn't. Some things should just be left the way God made them.
