Travel Tips For Under $1,000

If traveling more is on your resolution list, there are many affordable ways to do so. Without being a travel agent, a “points” guru or breaking the bank, it’s possible to see the world. Some of my favorite vacations include trips to Singapore, Italy, Mexico and Ecuador. All were booked between $600-700 per person, which included round trip flights and hotel (3 stars or higher). Next month is a trip to Bali! A 5 star resort and flight ran just over $1,000.

Apps
There are a few apps that have been instrumental in travel planning: Skyscanner, Kayak, Google Flights (website) and Expedia. While it takes some time and effort, searching across these platforms simultaneously provides insight to travel trends. Often, these sites recommend alternate travel dates (+/- a few days), nearby airports or include stopovers to make the cost of the flight more reasonable.

Set Travel Alerts
Set personalized parameters to receive notifications when flights drop below specific dollar amounts during a period of time. Some deals are offered exclusively through airline websites, so subscribe to their newsletters. Unless you travel often for business, there’s no need to be loyal to any certain airline. Just choose based on price.

Simple Accommodations
Select something clean, comfortable and in a good location. Save on lodging to have more spending money for experiences. When choosing accommodations, do research. Trust reviews, but take it with a grain of salt. Realize not everyone has the same travel style. When traveling, flexibility is key. Some countries may not have the same comforts as home (this is part of the experience). The best are Airbnb, booking.com and hotelstonight.com (for last minute travel plans). AirBnb is most often cheaper than booking hotels. It also provides a more authentic opportunity to live like the locals. Buy some local, fresh ingredients and make some of your own meals to save money.

Six Month Rule
Start planning your trip a minimum of six months in advance. The summer months and school breaks are very expensive to travel, not to mention full of crowds. When possible, travel in late fall, winter and early spring to beat the crowds. The temperature is more mild, but don’t let that stop you.

City Stays
While two weeks in the Amalfi Coast is preferred, sometimes there’s only time for a four day weekend in Italy. Yes, really! Long weekends or city stays are popular for people and families who don’t have a lot of time. It’s entirely possible to visit a city in a long weekend, with enough time to explore & check off all the attractions you came to see.

Hi friends! As the fall season is coming to an end I have been able to go through some images and am pleased with the fact that I tried something different in my approach to taking photos. I am happy to say that in the middle of getting back into the "back to school routine,” work assignments and testing recipes, I made the effort to go out to take some walks and enjoy nature with my camera on hand. When it comes to photography, lighting, composition and subject are important but I chose to focus on my angle or perspective with these images.  The common thread with these photos is that I shot my images from a lower, close to the
ground viewpoint.
For the image facing the open road, in the middle of a park bursting with early fall foliage, my camera was literally held parallel to the ground. I aimed to get the focus sharp towards the front and washed out the back to create depth or bokeh. The reason I chose to take this photo from such a low vantage point was because I felt like it made the road look bigger. Had I taken this photo standing up and straight on, the road wouldn't have seemed so spacious and wide. Even though the composition would have been a little bit more balanced, the depth of field I was trying to achieve wouldn't have been the same. The open road spoke to me because it reminded me of life and how we should try hard to view everything that life
presents us as an opportunity to grow
and learn.
The photo of the red leaf on the ground in front of Belmont Lake was taken during golden hour. There was warm lighting and the way the sun hit the leaf helped to highlight it's detail.  I took a lot of shots of leaves this season from different angles but this was by far my favorite. One, because its an angle that I haven't really tried before and two, because I was satisfied with the placement of the leaf in front of the frame, the cool tone of the water behind it and the other colors from trees in the background. It was a perfect moment and I’m happy I caught it.
Lastly, the shot of the leaf on the pavement was taken while I was waiting for the kiddies to come off the bus. It was one of those gloomy rainy days we had and I remember taking a class where my instructor stressed how she purposely chose to shoot photos on gloomy days where it was either wet out or overcast. Since then, I have always tried to see the beauty in days we might not think are as nice. I loved the mood in this image, along with the slick glossy floor and the  focus on the leaf. Even if it was dead on the floor and rained upon, it held up
its shape and allowed me to get a
good photo.
I hope I have inspired you to take a look on your own photography methods and ask yourself what you haven't tried.  Whether it's because you never thought to give it a chance or maybe because you thought you might not be good at it.  Give it a try, you have nothing to lose. Enjoy the process and the moment. Be patient with yourself and while shooting, take a step back and really think about how its helping you to improve.

Happy shooting!!

Peppermint Hot Cocoa Cookies

When Christmas rolls around, it immediately brings one thing to mind: cookies!  My sisters and I have a Cookie Day during the holidays where we bake hundreds of cookies for our family, friends, and neighbors.  We have some standards, like Chocolate Chip and Snickerdoodles, but we always like to throw in a few different cookies every year to change things up.  This year, these Peppermint Hot Cocoa Cookies are making the cut!

Subtle notes of peppermint inside of a super fudgey chocolate chocolate chip cookie topped with mini marshmallows, these cookies look and taste like peppermint hot cocoa. How cute are they?  They are so easy to make too!  One bite and you’ll think its Christmas morning.  They are definitely my new favorite and I know they’ll be yours as well!  Happy Baking!

Peppermint Hot Cocoa Cookies
2 1/4 cups flour
1/3 cup cocoa powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
2 sticks of salted butter at room temperature
3/4 cup sugar
3/4 cup light brown sugar
1 teaspoon vanilla extract
2 eggs
1 package of Hershey’s milk chocolate chips broken down as follows: 1/3 cup chocolate chips, melted and kept warm and the remaining bag keep separate
1/2 cup mini marshmallows plus more for decorating
4 candy canes, crushed in the food processor

1. Preheat the oven to 375. In a large bowl, using a whisk stir together the flour, cocoa powder, baking soda, cinnamon, and salt. Set aside.

2. In your stand mixing bowl or in a large bowl, beat the butter, sugar, and light brown sugar until smooth. Add the eggs and vanilla. Continue mixing. Add the melted chocolate.  Mix again.

3.  Gradually add the flour mixture.  Continue mixing starting on low and gradually increasing to medium speed after each addition.

4. When the mixing is done, add the remaining bag of chocolate chips, HALF of the crushed candy canes, and the mini marshmallows. Mix again. This mixing process will possibly pulverize the marshmallows.  Don’t worry, you’ll be adding more.

5. When all of this is complete, take parchment paper lined baking sheets and line them up next to the bowl.  Using an ice cream scoop, scoop up the dough (I like my cookies big.) Drop them on the pan leaving enough room on all sides for the cookies to spread.  Don’t flatten, but you can try to shape them to make them more round if need be.  Sprinkle a bit more candy canes over each cookie.

6. Bake for 8 minutes.  Remove from the oven and immediately add 2-3 marshmallows to each cookie!  Sprinkle them again with a little bit more candy cane for color.  Enjoy!

Last Minute Gifts

Rachael Severino is an incoming high school senior at Sachem North High School in Sachem School District. This aspiring writer has a knack for the written word. She has penned short stories, poetry and is developing an impressive body of work.

With the hustle and bustle involved at the end of the year, there is always the gifter who forgets to actually buy the gifts. No need to fret, as you can always find a present to buy for every person on your list.
For the glamourous soul on your list, turn to Amazon to get luxury eyeshadow, highlighter, and bronzer palettes. Amazon is a great place to find high end makeup for a cheap price. And, if you are off schedule for gift shopping, Prime will deliver your items within two days.
Speaking of Amazon, abuse Prime if you happen to have it. Amazon has just about every present you can think of and can have your order within a two-day time frame. This will allow you to get that fantastic gift you thought of months ago, even if you are in a time crunch.
For whoever needs to unwind and relax on your list, spoil them with a lovely fragrance set from Bath&Body Works. The holiday season is the best time to get great deals on sets, or the same fragrance body spray, body wash, and body lotion. Vanilla Bean Noel, Spiced Gingerbread Swirl, and Walking in a Winter Wonderland are the biggest hits  this season. Bath&Body Works is also an excellent place to shop for candles; filling someone’s home with a warm and comforting scent is a fantastic idea for anyone!
For the beloved techy on your list, consider purchasing a small helicopter. Easily found and paid for in Brookstone or Target, remote controlled helicopters, specifically the Hercules Unbreakable, will be a fabulous present.
For your starry-eyed friend, consider a constellation projector. These projectors put full star maps, often with planets and moons, onto the ceiling; you can shop these at Amazon or Barnes&Noble. A lovely companion present to go with this projector would be an astronomy or astrology book. If you are looking for someone interested in space, an astronomy book– introductory level for someone younger– is a good way to go. Astrology guide books are terrific for those interested in the stars, what they mean, and how they may affect our lives.
A wonderful idea to consider is a monthly box. Because this idea was originally such a smash, hundreds more variations popped up. This is splendid as now, you can find a monthly box suited to everyone’s taste. There is a box for the makeup lovers, foodies, and pop-culture connoisseurs.
Another universal present is the gift card. If you are completely out of ideas, a card to someone’s favorite shop, be it clothing, cosmetic, or technological, is always exciting. The freedom to buy whatever you want is always appreciated.
No matter how short you are on time, you can always get gifts that will thrill everyone on your list. Remember to shop smartly and effectively, and of course, have a lovely holiday!

Why you SHOULD let your child play video games

Many parents call me with concern that their child is spending way too much time playing video games; whether it be Call of Duty, Minecraft, Fortnite or whatever the rage is at the moment.
If you find your child is playing excessively and it’s affecting their responsibilities, social life and/or school work, then I definitely recommend creating some time limits to ensure your child is engaging in the world.
However, I would never suggest video games are bad at all. In fact, I find that video games are quite the opposite and can help your child tremendously, especially if your child is experiencing stress, anxiety or is going through a difficult time. And yes, most parents are shocked when I say this but let me offer you another perspective so you have a better understanding on how video games may be helping your child.
As a parent, you may have a hard time relating to video games since your generation grew up very differently. For you, it was common to play outside with friends or just play with rocks (joke!). It took little to entertain yourself as a kid and as a result you felt you were more engaged in the world. And you are correct, you probably were. But, that’s NOT the same world your kids are living in today. And that’s a very good thing.
Today’s world is about technology and progression. Children are living proof of these advancements; as they know how to navigate an IPHONE or IPAD before even learning to walk or talk. It’s as if kids of this new generation were born ready and willing to embrace all of what technology has to offer. Very different in comparison to our generation of the Rubik’s cube, Lite Brite and if you were more advanced, you had Atari (another joke!).
This is in addition to all the social media stuff (Instagram, Snapchat, Facebook, etc.) as well as the constant noise in your child’s mind from social pressures, self-criticism, perfectionism, anxiety and the list goes on. Furthermore, children who innately know the power of their minds and the need to “turn it off,” will often look to video games as an outlet. And that is not a bad thing.
Video games can allow children to shut their “minds off” from the daily stresses of life or negative thinking that can contribute to stress and anxiety.  Just as there are many other creative outlets including: coloring, listening to music, playing an instrument, baking and even meditation. Video games can be a helpful distraction.
Each child is unique and will gravitate to the creative outlet that works best for him or her. If part of that outlet for your child includes moderate video gaming, then “let the games begin!”

The first documented decorated Christmas Tree was in Riga, Latvia in 1510.
The first printed reference to Christmas trees appeared in Germany in 1531.
Christmas trees have been sold commercially in the United states since 1850.
The first Christmas tree retail lot in the United States was started in 1851 in New York by Mark Carr.
In 1856 Franklin Pierce, the 14th President of the United States, was the first President to place a Christmas tree in the White House.
Between 1887-1933, a fishing schooner called the "Christmas Ship" would tie up at the Clark Street bridge and sell spruce trees from Michigan to Chicagoans.
Since 1971, the Province of Nova Scotia has presented the Boston Christmas Tree to the people of Boston in gratitude for the relief supplies received from the citizens of Boston after a ship exploded in 1917 following a collision in the Halifax, Nova Scotia Harbor. Part of the city was leveled killing and injuring thousands.
Since 1966, the National Christmas Tree Association has given a Christmas tree to the President and  the first family.
Growing Christmas trees provides a habitat for wildlife. They also remove dust and pollen from the air.
Recycled trees have been used to make sand and soil erosion barriers  and placed in ponds for fish shelter.
More than one million acres of land have been planted in Christmas trees. The industry employs over 100,000 people. More than 2,000 trees are usually planted per acre. Almost all trees require shearing to attain the Christmas tree shape. At six to seven feet, trees are usually ready for harvest.
Christmas trees take an average of 7-10 years to mature. They’re grown in all 50 states including Hawaii and Alaska. 93% of Christmas tree consumers recycle their tree in community recycling programs, or plant them in their garden or backyard.
Approximately 2-3 seedlings are planted for every harvested Christmas tree.
Since 2003, Dee's Nursery from Oceanside, New York, has been delivering the spirit of Christmas to military families one Christmas tree at a time via the Trees for Troops program.
In the first week, a tree in your home will consume as much as a quart of water per day.
You should never burn your Christmas tree in the fireplace. It can contribute to creosote buildup and is not safe.
Thomas Edison's assistant, Edward Johnson, came up with the idea of electric lights for Christmas trees in 1882.
Christmas tree lights were first mass produced in 1890.
    Merry Christmas.

Warm Up Your Home for Winter

I don’t know about you but the minute we turned the clocks back, I started to get the winter doldrums. When our fall weather felt more like winter and the holidays crept up on us (again) – home and hearth was the place I was heading. Bringing warmth into our homes help keep the winter doldrums at bay, cheers us and provides a sense of well-being when many of us feel let down or exhausted during and after the holidays.
Once again, our homes can nourish and comfort us.  All we have to do is help it along a little.  So, what can we do to cozy up for the long winter ahead?
    • Family and friends love a fireplace and it is the focal point of a room – so why not dress it or change it up?
    • Create a new look on or over your mantel with family photos, candles, or a winter scene that let’s us feel our fire’s warmth and the great outdoors at the same time.
    • Paint the wall behind or around it with a warm color that’s cheery or add some furniture on either side to “beef” it up.
    • Make sure there’s a comfortable seating arrangement around it, if not, then create one.
    • Add some fun, warm inviting fabrics to your décor.
    • Velvets are “in” and add a bit of luxury as well as warmth to any room, especially a bedroom.
    • What about a faux fur comforter, or throw, or even some additional throw pillows that are fun and furry?
    • We lose the natural light early, so why not bring in more with additional lamp lighting and reflective objects like mirrors?
    • We add layers when it’s cold, so how about doing the same for your windows? Can they do with an extra layer of side panels next to your sheers which later can be taken off in the spring or summer?
    • Inexpensive slip covers over chairs can add a seasonal color change without great expense and is a temporary solution as well as a quick transformation to a room’s look.
    • If you have wood or tile floors, add some rugs for winter warmth as well as a great design statement all year round.
With little free time in our busy lives, perhaps a special place to curl up with a good book, a refuge that’s warm and inviting, just for you, would be a great winter project.  It could be anywhere and doesn’t need to be big or expensive.  I remember giving our kids a “time out” to think about their huge transgressions. Let’s consider this indulgence our grown up “time out” or “veg out,” if you will. Our escape hatch where the cold world outside is banned, just for a little while. Add a throw, some candles with a scent you love, a little music that relaxes you, and pray for a huge snow storm where you can stay in flannel pajamas and an old bathrobe (Mom’s and Dad’s – find a great movie for the kids to watch on TV or send them out to build a snow man, a really big one).
Whatever age and stage of life you are in – time is precious – make it meaningful and let your home put its arms around you this winter to help you get away from it all, for a little while.
Happy holidays and beyond this winter.

Dear Friends:

Well, it’s the end of the year, and what do we think of most?  New Year’s Resolutions, of course. So, let’s tell the truth here. How many resolutions did you make at the end of last year? Five? Ten? Twenty?

Here’s the key question:
How many did you KEEP?

You might be having a wave of shame at this point, but I don’t want you to. It is a given that if you made too many resolutions, you did not keep them all. It was too much. You could not. Nobody could have done all that.

I’ll tell you the truth about myself now. I kept all of mine. My secret? I only made one resolution last year; caring for myself and my health. That is no easy feat for a health care provider who is accustomed to putting everyone else first. But I did it because I knew I had to.

That will be my #1 resolution for 2019. For me, this will mean continuing with regular doctor check-ups (I did not do that before), continuing my vegetarian lifestyle and giving up dairy to become vegan.
Finally, I hope to get enough rest and recreation.

Now I did say #1 because here’s what I suggest.

Make your number one resolution, put it at the top of your list and put a star next to it. This is the one you are absolutely committed to keep. After that, add other goals you might keep. If you decide to keep any of those as well, great! But if you do not, that’s fine. However, you must remain committed only to number one. This will avoid guilt and make you focus on what’s most important. In your case it might be concerning a job, finances (remember, there is no level of income that cannot be outspent, so we all have to budget one way or the next), health, partnerships, children, etc., whatever it may be. Then, work hard to fulfill it. Seek professional counseling if you wish. Friends are nice to talk to. John Gray once said, “Every woman is a therapist…they each give advice…Often it is well-meaning but ill advised.” However, being a therapist is not just listening and giving solutions. It involves much training, skills, and objectivity.

So, choose just one thing.

Have a glorious Happy New Year.

Oh, I cannot tell you how much I’ve enjoyed hearing from and meeting some of you. I’d really appreciate hearing from more of you if you feel inclined.

With affection,
Dr. Phyllis-Terri
