Stuffing the Stockings with Joy

Tis the season to shop, shop, shop. From loved ones to friends and co-workers, your list undoubtedly has a lot on it. Small gifts for the stocking are often left for the last minute when you may be hard pressed to come up with creative ideas. There are many from which to choose – here are some of our favorites.
    Like any gift purchases, consider the interests of the person for whom you are shopping. A game aficionado might appreciate a deck of cards, a set of unicorn game cards or even a travel set of Cards Against Humanity. A techie will appreciate a screen cleaner, RFID protector or even a great new pop socket (also a super idea for a teen).
    When buying for young ones, there is no shortage of options. Keeping the gifts physically small is a must, so think of Match Box or Hot Wheels cars, mini dolls (Shopkins, Trolls, My Little Pony or others that she calls her favorite), super bounce balls, Crayola kits, plush toys or action figures.
    For the lady who loves to look put together, new nail polish – in the latest colors – will never disappoint. Lipstick gift sets or mascara and primer wrapped together are also great options. Both pretty and practical, a small make-up pouch [to hold it all when she is out and about] is another great stocking-sized option. You will find them in the collections of nearly every designer.
    Lip balms or a small bottle of cologne may do the trick for the man on your list. Help him polish his look with a new pair of shades or get a new copy of his favorite movie….it’s time to update that collection. If he loves to do things around the house, consider a new all-in-one tool to replace the one he’s had for years. You may also consider small accessory items such as a wallet, slides, or a new case for a cell phone.
    With wellness and self-care being front and center these days, you may want to include an essential oil, healing energy bracelet, or writing journal and a beautiful pen. Remember, gift giving is also an opportunity to provide something that the recipient would love, but may be reluctant to buy for themselves. 
    Don’t forget to include a gift card in each stocking. Consider an iTunes or Xbox card for music or game downloads or a card for movie tickets to the latest opening films. How about a card to your recipient’s favorite shop for an item that wasn’t purchased from their list? A card to a favorite coffee or ice cream shoppe will undoubtedly deliver a smile. If you are unsure of which kind of card to purchase, you can give a card that allows even greater choices – a Visa, Amex or Amazon card make great stuffers.
    If your four-legged family members have stockings, treats and toys are always welcome. Our furbabies look forward to the holidays to get new mice toys, feather toys and balls to chase. A new tub of treats is always appreciated.
    Remember, keep it small, keep it meaningful and keep it entertaining to extend the fun that comes from opening holiday gifts. Wishing you and yours a very happy holiday!

 

Holiday Arancini Rice Balls

Each season brings a new opportunity to create or reinvent your style and traditions. This is one recipe that needs no change!
    Just one bite and you too will know exactly why I have continued to send out this beloved family recipe to you each year to inspire you at “Christmastime!”  
    
Meat sauce or Bolognese (you can make this ahead of time and refrigerate for days until ready) 

1 ½ lbs. ground beef and sausage meat (if desired)
¼ cup extra virgin olive oil
1 chopped Vidalia onion 
1 14 oz can San Marzano whole tomatoes blended 
1 6 oz can of tomato paste 
½ t red pepper flakes
Salt and fresh black pepper
Fresh basil (4 –5 leaves chopped)
Pinch of oregano
Frozen small tender baby peas 1 ½ cups or as desired
1lb fresh mozzarella cheese cut into small chunks

Brown onion and meat in a skillet until brown and crumbly. Season with salt and pepper. Add tomatoes and paste; cook on low stirring occasionally. The sauce should be thick and dense. Cool. Then add frozen peas.

For The Rice: 
6 cups low sodium chicken broth 
2 T extra virgin olive oil 
1 pinch of saffron (if desired)
3 cups white rice (I use Carolina long grain or Arborio)
4 large eggs separated (or more if needed)
2 ½ cups of grated cheese (Locatelli Romano)
1T butter

To coat balls for frying:
4 egg whites beaten with a splash of cold water
2 cups flour 
2 cups Italian flavored bread crumbs 
Deep fryer with vegetable oil for frying
Salt to taste

    Bring the broth and butter to a boil. Add the rice, bring back to boil then lower to simmer. Stir constantly, if it
becomes too dry, add a bit more broth or water. Cook until all liquid is absorbed and rice is tender but a bit “al dente.” Mix in cheese, the yellow beaten eggs, salt and pepper. Refrigerate until cool (you can do a day or two in advance). Sometimes if I have leftover, I add a tiny bit of marinara to the rice for color and flavor. 
    Scoop rice into hand, make an opening or a well and stuff 1 ½ t of meat sauce and peas into the center with a small chunk of fresh mozzarella cheese. Close back up by rolling gently into a ball with both hands. Roll into the flour on all sides, then roll into beaten egg white, and finally into breadcrumbs; constantly shaping and rolling between your hands. You may have to wash hands in-between rolling a few times. Place on a flat cookie sheet until ready for frying. You can fry 5-6 at one time until golden (approx. 4-5 minutes). Drain on paper towel,  sprinkle a bit of salt. You’ll be lucky if you have any leftover!

Keep Calm with Gratitude this Holiday

As the holidays quickly approach, most people begin to feel the wave of anxiety wash over and through them. Think: Take a long, deep breath; listen to your heartbeat and count to ten slowly. Instead of letting the wave blindside you, here are several things you can do to keep calm during the busiest season.
    Give gratitude for yourself and others. Before your loved one(s) walk out the door in the morning, give them an extra hug. With the high level of negativity in the world today, remember who they are to you and why you love them. Let them know. And, don’t be afraid to give yourself gratitude as well for doing a wonderful job at the office or in the   field, parenting, grandparenting, volunteering, or whatever it is you do so well.
    Drive through your local neighborhoods for entertainment.  Load your family into the car and bring hot cocoa and popcorn.  Don’t want to pay the $20-$30 per car to view the Magic Lights display at Jones Beach? Follow your favorite streets to see which houses have the grandest              displays. My partner and I do this every year to get into the holiday spirit. Newsday lists the most visited homes in Suffolk and Nassau counties.
    Burn your candles and bubble up your baths. I don’t know about you, but I own about ten different holiday-scented candles. Instead of packing them away, light  them in your den, bathroom and kitchen for aromatic ambience.  Have bottles and those fizzy    bubble bath bombs? Let your little ones choose their favorite on a weeknight as an extra treat before bedtime.
    Use your crockpot or air fryer for a mid-week festive meal. Put a turkey breast with potatoes and your favorite veggies into the crockpot before you leave for the day and set the table so when you get home, all that’s left to do is enjoy dinner. Have a little extra energy? Buy premade cookies and bake them afterwards. Take out all the sprinkles and decorations from last year (they last a long time), and let the kids decorate them.
    Remember those less fortunate than you. Donate to your favorite charity, volunteer at a soup kitchen, or organize a toy, clothing, or food drive. Help where you feel most needed and appreciated. Although you may not see the reward your gifts and efforts will bring, know that you have made someone else’s day.

Tis’ the season to Deck the Halls and what better way to start than with holly, jolly houseplants. Here is a list of a few plants, some of course you have heard of with a few surprises thrown into the mix. Plants and flowers also make a very practical gift for yourself and others. The holiday season can become very stressful and at times lonely for some folks. A gift of plants and flowers can certainly brighten anyone’s spirit.             1. Poinsettia – No other house plant is as associated with the holidays as the Poinsettia. Just for the record, poinsettias are not as poisonous to pets as we've been taught. They will certainly upset a cat’s stomach, but a large quantity would have to be consumed in order to achieve poison status.
    2. Christmas Cactus – The Christmas Cactus is a popular holiday plant because its colorful blooms often align with the Christmas holiday. Given the proper care it can survive and bloom for many years
    3. Amaryllis – Amaryllis deliver huge, brilliant flowers in a variety of jazzy color combinations.They’re also among the easiest to grow. Available in bulb form or in growth, these are a stunning accent for the holiday season and bloom for quite a while.
    4. Norfolk Pine – Norfolk Island pines make excellent Christmas trees for tabletops when they are small. If you’re trying to go for the Charlie Brown Christmas tree look, give a Norfolk Island pine a try. But, be aware that this little six inch plant can one day grow as tall as twelve feet.    
    5. Lavender or Rosemary Trees – These herbs grown in many outdoor gardens also make popular holiday plants. Like the Norfolk Island pine, lavender and rosemary can come decorated and shaped to resemble miniature Christmas trees. Their decorative quality and fragrance make these plants a wonderful addition to any home.
    6. Christmas Palm – Not as common as other holiday house plants, although  they make an unusual addition to any holiday houseplant collection. Adonidia merrillii is commonly known as Christmas Palm because of the red berries the palm tree produces during the holiday season but really, any palm is beautiful.
    7. Succulent Plants – Succulents are ideal plants for busy people who don’t always remember to water. These plants can take considerable neglect. Their leaves are fat and swollen (hence succulent) so they’re able to store water for survival under dry conditions. They come in unique shapes, textures and colors (oftentimes specially painted in holiday colors) and are often used as indoor plants that add decorative attractions to homes or offices.
    8. Cyclamen – Their beautiful vibrant heart-shaped foliage and many colorful blooms make this plant a popular holiday houseplant.
    9. Kalanchoe – Like the holiday cacti and succulents, Kalanchoe are pretty easy to care for and come in a wide variety of colors that brighten up the house during the holidays. The flowers are long lasting and the foliage is a nice rich and shiny green.
    10. Orchids – The colorful blooms aren’t your standard holiday present and can make a beautiful surprise for anyone receiving them.
    11. Lucky Bamboo – The Lucky Bamboo is actually not a Bamboo plant at all. It belongs to the same family as the Lily plants, but whether it will bring you luck remains up for debate. This plant is also easy to grow and if it attracts good luck and some feng shui while ringing in the New Year, then why not???
    12. Mix Different Houseplants – In a decorative basket or pot, add a bow and some bling in the form of holiday picks and voila, your halls can be all decked out in no time.

Celebrating the Holidays in New York City

It’s the most magical time of year and one of the best reasons to visit the Big Apple. From the holiday shops and window displays to the decked out rooftop bars and must-see attractions, there’s no better place to be. Even if it means bundling up, there’s something unique about the hustle and bustle of New York City during the holiday season. 

The Rockefeller Christmas Tree
The Rockefeller Christmas Tree has traveled over seventy miles from Wallkill, NY to the city that never sleeps. For both tourists and native New Yorkers alike, it’s a must to see the famous, world-wide symbol of the holiday season. The 72-foot tree topped with a Swarovski star contains 3 million Swarovski crystals and is wrapped in five miles of LED lights. Visiting the tree is one of the top best things to do especially since it’s free of cost. 

Bryant Park Holiday Shops
Monday-Friday: 11AM-8PM
Saturday-Sunday: 10AM-8PM
After you take a few loops around the Bryant Park ice skating rink, why not browse the open-air holiday market. If you’re looking for the perfect holiday gift, you might just find it here. There are over 170 unique vendors, housed in small kiosks along Bryant Park’s alleys and terraces. It’s a winter wonderland where you can find anything from clothing and jewelry to household gifts, crafts, art and much more. Don’t forget to check out the mouthwatering food vendors and boutiques with goods from around the world!

Christmas Spectacular
If you have yet to experience the Christmas Spectacular, you are missing out! This family-friendly event is truly breathtaking and brings out the joy of the holiday season. Starring the Radio City Rockettes and over 140 performers, the show offers a nice mix of singing and dancing. Like always, the Christmas Spectacular will include breathtaking holiday visuals although this year, there will be an all new final finale worth seeing. The rockettes will also be showing off their new costumes while the creative directors impress the audience with state of the art technology. 

Eataly’s Flatiron Rooftop Restaurant (Serra by Birreria)  
Located on Eataly’s top floor and usually covered in greenery, Serra by Birreria will be decked out in snow-white flowers, hanging chandeliers and twinkling lights this holiday. Upon entering, you’ll feel as if you’re walking into a snow globe, only a snow globe with a bar. Their winter wonderland menu will include special cheeses from the northern region of Italy, gnocchi and other delicious warming dishes. It’ll be a chance to enjoy craft cocktails in a setting that is picturesque like the Italian Alps. 

230 Fifth Rooftop Bar
You may be thinking it’s too cold to visit a rooftop but in this case it’s not. At 230 Fifth Rooftop Bar, wrap yourself in a robe as you sit in heated igloos with spectacular views of NYC’s skyscrapers. 
Although available on a first come first serve basis, sharing igloos with strangers and making friends is what it’s all about. At 230 Fifth Rooftop Bar you’ll be singing to popular Christmas songs as the lights flicker to the beat and you sip on spiked hot chocolate. 

Macy’s Santaland 
This 13,000 square foot indoor display is perfect for the entire family. Aside from Santa himself, they’ll be Christmas carolers, prancing reindeer, an enchanted forest, animatronic toys, and a train exhibit. The day gives parents great photo ops of their children and a sneak peek into Santa’s workshop. Naughty or nice, you can share your wish list with Santa and watch as his sleigh gets ready for the big night. And, since Santa is a popular man, reservations are required whether it be a few days in advance or thirty minutes beforehand.

NY Botanical Garden (Open until January 21st)
This is one of NYC’s favorite holiday traditions and one of the most enchanting attractions yet. With almost a half-mile track, you’ll get to see all different model trains and crafted miniatures of NYC under thousands of twinkling lights. The exhibit lets you watch trains zip through 175 New York landmarks including the Statue of Liberty, Ellis Island and other iconic skyscrapers. It’s especially great for kids since they can enjoy a ride on the Everett Express and play in an adventure garden filled with holiday spirit.­

HOLIDAY Travel Tips

Travel is one of the greatest gifts to give. Experiences and memories outlast the things we stow away in jewelry boxes or the attic. The gift of a memorable experience truly keeps on giving. Spending time with one another is a treat for everyone. Here are some ways to make it happen!

Book in Bundles
From now until early February, there are a lot of last minute deals on websites such as Expedia and Priceline. Bundling can often result in a free hotel stay as opposed to booking separately.

Be Flexible
Convenience is key. Tweak the holiday to fit what works best for your family. What would happen if you celebrated with your in-laws on the 23rd and then jetted off to an island with your loved ones? You’d have a great time, that’s what! Don’t confine yourself to specific dates, it’s the holiday season for a reason! Some of the best flight deals can be found on Christmas Eve, Christmas, or New Year’s Eve.

On the Road
Google Trips predicts travel times based on anticipated traffic. Pack plenty of snacks & games for your little ones! An EZ Pass coupled with a before dawn or after 8 PM departure are best to avoid traffic slowdowns. Don’t forget about public transportation. It’s often quicker, but not necessarily cost effective when traveling with multiple people.

Flying
Pack light; carry-on bags only. Don’t risk losing your luggage. Go minimalist to travel with ease. Many airlines now charge for checked luggage, but don’t waste the money. Travel internationally during popular American holidays. Yes, booking that trip to Paris can actually be CHEAPER than heading to Florida, especially Disney. Skip Epcot, see the real thing instead!

Expert Tip: booking two one-way tickets can be cheaper than booking round trip flights.

Go Where Everyone Isn’t
Typically the warmer the weather, the higher the fares. Escape NY weather by going for mild climate destinations. You’ll miss the crowds and score some great deals. Cozy up by the fire pit, bundle up and have a beach vacation. Winter is an ideal time for the east end if traveling off Long Island isn’t an option. You’ll enjoy low nightly rates, less crowded restaurants and vineyards.

Traveling is always a great adventure! It’s also a great way to get the family together and make memories this holiday season!

When I started writing these articles for ET Week magazine, I often wondered why I was doing so. Afterall, wasn't my plate already very full? Was anybody reading them in the first place? 
    Eventually, I began to hear from some of you that these articles were inspiring. And that was more than enough to inspire ME to continue writing them. That was a good segue into the subject of this article.
    There is one ritual I always follow during this time of year, and that is to watch the film called, “It’s a  Wonderful Life” (If you don’t catch it on television, the DVD is available).
    A short synopsis:  George Bailey, played by the late wonderful actor Jimmy Stewart, has become very depressed. He’s despondent about his life and feels as if he failed many people in his small town. He believes that he and everybody else would be better off without him here. Thus, he is about to take his own life.
    Enter Clarence, an angel who is  assigned to save George.
    Clarence does this by putting George into a new life without him in it; making him experience how everybody’s life and the small town in which he lives, would’ve been if he had never been born.
    When he comes in contact with his wife,  children and the townspeople, they shy away from him and treat him rudely. It is indeed a dismal scene. After all, to them he was never there in the first place.
    Then, George is put back into his present life, jubilant, grateful and enthused to live and make things better for others in his town.
    This is a must see film. Even if you already have, see it again!  Why? Because surely every one of us have gone through a period when we feel failure. Failure to make a contribution to relatives, friends and others. Inadequacy to live up to our potential. It is only human to go through times like this.
    But truth be known, you don’t have to be in a so-called helping profession to help people. Case in point; several years ago my sister ran into a man who had gone to elementary school with me. He told my sister that he had never forgotten me. Why? Because, shortly after his grandparent had passed, I had put my hand on his shoulder and said, “I’m sorry.” Such a simple gesture, an incident I had long forgotten, but meaningful enough to him that he’d carried it with comfort into his adulthood.
    The point is, we have helped many people without realization. What may have seemed like an innocent act to us, even long forgotten, had become meaningful to others. Those little acts of kindness are significant.
    Therefore, my suggestion would be to deliver the gift of kindness. Say or do one thing, whether it be little or big, every day. Drop pieces of light into someone’s life this holiday season. You will light up other’s lives as well as your own.
    In closing, you have problems, so do I—with health, money, employees, employer, children, relatives and friends.  It’s not a perfect life for any of us, so moving forward, don’t forget to count your blessings. Because it IS a wonderful life!

    Upon first glance, Toast is your typical neighborhood coffee shop. It is only after you walk inside and witness the hoards of people waiting for a table, that you realize there must be something distinctively special about this place. Instead of waiting an hour for a table, I opted for a seat at the bar. A fan of community-like seating, I was more than happy to join some of the locals and observe their breakfast choices whilst browsing the menu. 
    The breakfast menu is organized in a seamlessly logical manner, with sections including: Omelets, Breakfast Burritos, Scrambles, French Toast, Pancakes and Waffles. Gluten-free options come in surplus, and 100% real maple syrup is available for a mere $2 up-charge. 
    Some items that stood out to me included the Sweet Potato Pancakes with Honey Butter and the house-recommended Avocado BLT Omelet. While I opted for something simpler, I will be trying these on my next few visits to Toast. (They also offer a lunch menu, as Toast is open until 3:00-3:30 which includes lite bites, salads, burgers, wraps, and house specialties.)
    After ten minutes of indecisive mental banter, I ordered the Early Riser “Eggs Any Style” choosing two organic farm-fresh poached eggs, bacon, sausage and home fries. If you’re trying to watch your waist, or have certain dietary restrictions, they offer multiple substitutions including fruit, egg whites, multi-grain toast, and gluten-free variations of their crowd-pleasing favorites such as the pancakes, French toast and waffles. 
    While I waited for my breakfast, I perused the drinks menu. And let me tell you, the drinks here deserve their own menu. Cold beverages, coffee drinks, smoothies, and mimosas – the list seems never-ending, with something for everyone. I ordered a vanilla cappuccino, made with almond milk. To say this cappuccino was good would be iniquitous. (I would consider this the best cappuccino I have tried to date and that’s saying a lot.) Served piping hot, in a quirky mug, it was love at first sip. They offer regular milk, soymilk and almond milk – just to name a few. All of their mugs are uniquely chosen (no two alike), and this small, but important, detail resonated with me as something that would keep me coming back. The non-commercial nature of Toast is one of their greatest assets in my opinion. 
    When my food arrived, quality was noteworthy and the home fries were excellent. Cooked just right, seasoned perfectly – these are a must-try if you’re visiting Toast for breakfast.   As I enjoyed my breakfast, I studied the atmosphere and patrons who seemed to be truly enjoying their experience. The décor is charming and there was a lengthy wait for most of the early afternoon. 
    Whether I’m working on my next review, craving a first-rate cup of coffee or simply in the mood for some authentic breakfast food, I will be back at Toast soon. I highly recommend you visit them at their Port Jefferson or Patchogue location for an authentic, sincerely gratifying dining experience. 

 

Holiday Hair

A spread for your Bread! This is an easy salsa to serve at your next gathering with baguette slices  ­–an Italian spin on salsa. Great on crackers, pita’s or chips. It’s a great crowd pleaser! You may prepare it a day ahead, just don’t add the fresh mozzarella until you’re ready to serve. Try this delicious salsa  on chicken or fish, in wraps, or tossed with your favorite pasta. This tasty blend works with a multitude of variations and possibilities; my book club just loves when I arrive with this. Festive on your table for every season and for all reasons! 

4-5 cups diced fresh ripe tomatoes
2 Vidalia onions chopped 
½ cup fresh basil chopped
2 T fresh parsley chopped
1 T fresh oregano
1 T fresh chives chopped
8 oz. or more of fresh diced 
   mozzarella
½ cup extra virgin olive oil
Salt and pepper to taste
Pinch of red pepper flakes (optional)
1 baguette loaf of bread sliced thin. Brush with olive oil on both sides 
   and toast lightly.

In large frying pan, sauté onions until soft and translucent. Toss fresh tomatoes in the pan with onions for about 3-4 minutes. Add all fresh herbs and spices and set in a bowl to cool completely before adding diced cheese. Mix together and serve. Enjoy!

Many find this time of the year extremely difficult due to the fact that they intermingle with family members. Professionally, we know that at this time of the year more people enter depression than any other time of the year. There are a number of reasons for this to include seasonal depression; the reliving of past memories and the interaction with family members that doesn’t really happen any other time of the year. This article will address the interactions with family members. 
    First, let’s address the loss of family members that have past. That falls under the heading of Grief and Loss. While the pain never seems to subside, the closer we are to the loss the more extreme the pain; conversely, the further away the better we are to handle the loss. If after years of loss you still feel acute pain, then therapy is warranted.
    Families have an impact, in large because of change. Change happens in a number of ways; someone in the family is physically or mentally ill, or in the process of dying. That is a very broad spectrum. Or perhaps someone in the family is addicted to a substance or behavior. All the above affect the dynamics of the family system. Some will have come from this kind of system as the family of origin. Change for many happens once they exit the system. The problem then during the holidays is that the system has not changed but the individual has changed. Now the individual no longer fits in the system, which creates feelings of discomfort and abandonment. The easiest way for me to have you see this is to have you imagine a mobile, where each one of the pieces represent a family member. You remove yourself and the mobile loses homeostasis. The only way to correct it is to put yourself in the exact spot you removed yourself from and not allow change.
    Understanding some of these dynamics can prevent depression over the holiday season if: you accept yourself the way you are; you accept all family members the way they are and most importantly, you let go of all resentment, forgiving everyone and everything.
